We all need a good Homemade Rocky Road recipe – here’s mine! Learn how to get perfect chocolatey, gooey squares, every time. A delicious tray bake treat you can make in minutes without even having to bake.

I LOVE an easy Rocky Road recipe (Easter Rocky Road, Rolo Rocky Road, Malteser Rocky Road I’m looking at you 👀) but I just realised I’ve never shared a classic Rocky Road recipe.

So here it is… my classic recipe that gets you perfect, crunchy, gooey, rich chocolate squares with just a few minutes of effort. Simply melt, mix and set.

Depending on where you’re from, Rocky Road can mean different things..

Some swear on fruit and nuts being involved, in some countries it’s a traybake (like here in the UK), whereas some see it as more of an ice cream flavour (like in the US). 

Meanwhile, in Australia, it is similar to ours but doesn’t tend to include biscuits.

In this recipe, we’re going for the classic no bake tiffin style with biscuits for crunch, marshmallow for gooey squidginess and melted chocolate. The addition of golden syrup and butter, stops it from being to hard.


Rocky Road Ingredients

Ingredients for making easy Rocky Road
  • Butter – Unsalted is best. NOT margarine
  • Dark and milk chocolate – This recipe uses a mixture of very dark chocolate and milk chocolate for a good balance of flavour. I wouldn’t recommend only using milk chocolate as they won’t be dense/fudgy in the same way. A slightly different ratio if you don’t have enough of either will be fine though! DON’T USE COOKING CHOCOLATE! It has additives to stop it setting in the same way as regular chocolate.
  • Golden syrup – This helps to add sweetness and stops the mixture being too hard when set
  • Chunky filling – This is made up of mini marshmallows and crushed up digestive biscuits

How to make Rocky Road

1. Put the butter, chocolate and golden syrup in a large bowl and melt as per the recipe below.

2. Stir until it’s thick and well combined.

3. Add the marshmallows and the digestive biscuits. Stir until everything is well coated.

4. Line a 20cm x 20cm baking tin with baking paper and press the mixture firmly in. Set in the fridge then cut into squares.


STORING

Once the Rocky Road has set, it can be kept at room temperature, unless it’s a warm day and then it would be much better in the fridge.

Top tipS

My favourite chocolate 

I use my favourite Callebaut chocolate for this recipe. This chocolate is just amazing. It melts so well and really makes a difference to any recipe. 

When you buy it in bulk (1kg bags at a time) from Amazon it works out to about the same price as supermarket chocolate. A good investment I think as it really does make SUCH a difference. You can then use it again for other bakes.

Baking tin

I usually use a tin like this for my rocky roads or tray bakes. It measures 20cm x 20cm and gets the best thickness. You can use another size or shape but just be aware your squares might be thinner or thicker.

Line the tin!

Make sure you do this so you can get the Rocky Road out quicker and without breaking it. I use baking parchment or baking paper for almost everything I bake. No sticking, ever.

I buy it in bulk from Amazon so I don’t run out, and it works out cheaper. Be careful not to confuse it with greaseproof paper, which isn’t suitable for no-bake cakes.

FAQs

How long does Rocky Road stay fresh for?

In the rare chance this isn’t all eaten immediately, it should be fine for up to a week. After that the marshmallows tend to get very sticky and wet where they’ve been cut.

Help! My Rocky Road is too hard to cut.

Once you’ve taken it out of the fridge, allow it to cool to room temperature for 30 minutes before trying to chop it up.

Can you recommend how to present this as a gift?

Once I have cut up my slab of Rocky Road, I pack the pieces, fresh from the fridge, into little bags like these cellophane bags. It adds a special something to make them feel like a real gift.

Rocky Road {Best Ever Recipe!}

This is the ULTIMATE Rocky Road recipe. A classic combination of gooeyness, crunchiness and chocolatey indulgence that you can mix up in minutes and leave to set. A perfect traybake treat.
Prep Time: 10 minutes
Total Time: 3 hours 10 minutes
Servings: 16 servings

Ingredients 

For melting:

  • 150 g Unsalted butter
  • 250 g Dark chocolate , Chopped
  • 150 g Milk chocolate
  • 4 tbsp Golden syrup

To stir in:

  • 200 g Mini marshmallows
  • 150 g Digestive biscuits, Crushed into chunks

Instructions 

To use the microwave:

  • Put the butter, chocolate and golden syrup in a large bowl and microwave for 30-45 seconds.
  • Stir until it's thick and well combined. Microwave for a further 30 seconds. Stir again. Set aside for 5 minutes until it's cooled slightly.

To use the hob:

  • Add your butter into a saucepan and melt over a very LOW heat, then add the chocolate – again on a very low heat.

Add your fillings:

  • Add the marshmallows and the digestive biscuits, stir until everything is well coated.
  • Line a 20cm x 20cm baking tin with baking paper and press the mixture firmly in.
  • Allow to set in the fridge for at least 3 hours or overnight.
  • Turn out of the tin and cut into small chunks using a very sharp knife.

Notes

Chocolate: Don’t use ‘cooking chocolate’ here! It won’t set in the same way as regular chocolate.
Tin: Use a 20cm x 20cm square tin. You can use another size or shape but just be aware your squares might be thinner or thicker.
Line the tin: Make sure you do this so you can get the Rocky Road out quicker and without breaking it. Use baking paper or baking parchment NOT greaseproof paper for best results.

  1. I made this with my 4yo daughter and it was really easy to do and went down well.
    It makes 16 chunky bits of rocky road so it goes a long way! I would say the ratio of biscuit to marshmallow is a bit off for my taste so I’d probably do more biscuits and fewer marshmallows next time but I would make this again.
