Rocky Road {Best Ever Recipe!}

This is the ULTIMATE Rocky Road recipe. A classic combination of gooeyness, crunchiness and chocolatey indulgence that you can mix up in minutes and leave to set. A perfect traybake treat.

Ingredients

For melting:

  • 150 g Unsalted butter
  • 250 g Dark chocolate Chopped
  • 150 g Milk chocolate
  • 4 tbsp Golden syrup

To stir in:

  • 200 g Mini marshmallows
  • 150 g Digestive biscuits Crushed into chunks

Instructions

To use the microwave:

  • Put the butter, chocolate and golden syrup in a large bowl and microwave for 30-45 seconds.
  • Stir until it's thick and well combined. Microwave for a further 30 seconds. Stir again. Set aside for 5 minutes until it's cooled slightly.

To use the hob:

  • Add your butter into a saucepan and melt over a very LOW heat, then add the chocolate - again on a very low heat.

Add your fillings:

  • Add the marshmallows and the digestive biscuits, stir until everything is well coated.
  • Line a 20cm x 20cm baking tin with baking paper and press the mixture firmly in.
  • Allow to set in the fridge for at least 3 hours or overnight.
  • Turn out of the tin and cut into small chunks using a very sharp knife.

Notes

Chocolate: Don't use 'cooking chocolate' here! It won't set in the same way as regular chocolate.
Tin: Use a 20cm x 20cm square tin. You can use another size or shape but just be aware your squares might be thinner or thicker.
Line the tin: Make sure you do this so you can get the Rocky Road out quicker and without breaking it. Use baking paper or baking parchment NOT greaseproof paper for best results.
