Sarah’s Notes

You may already be familiar with this Tuscan-style creamy dish from my other variations on Marry Me Chicken, but in case you don’t know…

I adapted my own version of this dish a while ago (so good it’ll make your diners want to marry you, as the story goes).

I thought it would lend itself perfectly to my slow cooker collection, and after plenty of testing, I was right!

Unlike my pasta dishes, this one will probably need a side dish to go with it. There are a few ideas below, or keep things simple with some microwave rice just before serving.

Slow Cooker Marry Me Chicken Ingredients

The raw ingredients for Slow Cooker Marry Me Chicken laid out in small bowls on a white counter top.
  • Chicken – We’re using 650g/1.4lb of skinless and boneless breasts for this recipe, which is about 4 breasts, cut into bite-sized chunks.
  • Sun dried tomatoes – The type in an oil-filled jar, not the dry ones.
  • Garlic – I use peeled and crushed fresh garlic here, but feel free to use pre-prepared from a jar or frozen.
  • Chicken stock cube (bouillon cube) – Just add this to the slow cooker with the water measured, no need to dilute further.
  • To stir in once cooked – Cream cheese, grated parmesan, fresh basil, sea salt and ground black pepper.

How to make Slow Cooker MArry Me Chicken

What to serve with this…

Leftovers

In the fridge You can keep this recipe cooked in the fridge for 3 days. Reheat fully in the microwave or on the hob before serving.

In the freezer Creamy sauces don’t freeze overly well and the chicken would be a little dry when you’re reheating it from frozen, however I wouldn’t let it go to waste. If freezing is your best option, you can do so, it may need a little extra liquid (water) to be added as you reheat it.

FAQs

Can I make this dairy Free?

Yes, sure. Just swap the cream cheese and parmesan for dairy-free alternatives and you’re good to go.

Where does Marry Me Chicken come from?

I became aware of it to start with on Pinterest and Tik Tok. I looked at lots of online recipes and discovered that this chicken-in-a-vaguely-Italian-style-cream-sauce was coined by American food publication Delish, because it was even better than Ina Garten’s much-loved ‘Engagement Roast Chicken’ recipe (who is a national foodie treasure in the US) – according to Today.

I decided to have a go at it, but with my own tweaks that I thought it needed, while keeping the main ingredients in common with the original: chicken, cream, sun dried tomatoes and parmesan (although I have swapped cream for cream cheese for the slow cooker version so there’s no curdling.)

While I love the chicken recipe on its own, the flavours are so adaptable, which is why making this a super family friendly meal is so achievable. You could also try my sister recipe to this… Divorce Me Chicken!

Can you recommend a good slow cooker?

The Morphy Richards Sear & Stew Slow Cooker is my all-time favourite because you can use it for initial browning on the hob and it’s really light.

I wrote up a whole slow cooker review though, where you might find another one to suit your needs. Have a read here.

Notes

Sun Dried Tomatoes – Use the type in jars in oil. Drain the oil and pat dry. Be sure to cut these up very very finely. If they are left too large they can be a little chewy when slow cooked. Cut up very small, they just add lots of flavour and almost melt into the sauce.
Plain Flour – Plain flour is the same as all-purpose flour. A 1/4 cup is the equivalent of 1 ounce.

Yummy as. I added a tsp onion powder, 1/2 tsp chilli powder and a nob of butter. Had no fresh basil so added a spoon of pesto at the end, cooked some penne and added it in at the end 👌🏾😋 saucy and delish

    1. Hi Jaileen, saucy and delish is exactly what we’re after! Your tweaks sound brilliant, the onion and chilli powder, a knob of butter and a spoon of pesto in place of the basil are lovely touches, and stirring penne through at the end is a great shout. So glad it was a hit, thank you!

Huge hit with the family, I used a can on diced tomatoes as I just didn’t have any sun dried ones and still turned out lovely.
Will have to try with the sun dried tomatoes next time

    1. Hi Autumn, so pleased it was a huge hit! Lovely to know it still turned out beautifully with tinned tomatoes when you were caught short. Do give the sun-dried ones a go next time, as they bring that signature intense, slightly sweet flavour that makes Marry Me Chicken so special. Thank you!

    1. Hi Denise, absolutely. You can simply leave the garlic out and it’ll still be lovely, just a little milder. We hope you enjoy it!

  3. If I wanted to double the recipe to batch cook this, would I also have to increase the slow cook time? Thanks!

    1. Hi Madi, the good news is you won’t need to double the cook time. With a fuller pot it may take a little longer to come up to temperature, so add maybe 30 to 60 minutes and simply check the chicken is cooked through before serving. Just try not to fill the pot more than about three quarters full. Happy batch cooking!

    1. Hi Rose, great question! We haven’t tested it in an oven and couldn’t confirm the timings. You can absolutely prep it the night before though, just pop everything (apart from the cream cheese, parmesan and basil) into your slow cooker pan, keep it covered in the fridge, then switch it on in the morning. Stir those final ingredients through just before serving.
