This Sticky Sausage Tray Bake combines sausages with veggies and shortcut sweet sauce, thrown together in minutes – you can’t go wrong. Such an easy midweek favourite!

People love how simple it is and it’s always a win with both kids and adults, which equals dinnertime serenity for a busy week.
When I showed this recipe again on TikTok recently, it got more than 1 million views and one reader said it has inspired them to try find my website (hope you like it, Amanda!) Another said it had been a favourite in her house for years (thanks, Amy!)
Tray bakes are one of life’s greatest weeknight hacks – if you haven’t tried one before, you will be shocked at how hands-off and time-saving they are.
For this dish you can either prep it ahead and just switch the oven when it’s time, or get on with something else while the whole meal is cooking for about 45 minutes (no need for sides and very little washing up!)
I have been known to do pickups in the time it takes for dinner to cook on evenings when there’s appointments or clubs to dash to, meaning the precious window in between can be spent eating a tasty, nutritious and satisfying meal.
Sausages are a fantastic go-to for a quick and easy dinner too.
They’re value for money, easy to work with and usually everyone loves them, so I made sure my one pot Sausage Pasta and Slow Cooker Sausage Casserole are (almost) as fuss-free as this one too.

This Sausage Tray Bake has a secret and rather surprising ingredient of marmalade (yes, you read that right). It’s a fantastic shortcut to a sweet, sticky and delicious glaze.
I use it in my Air Fryer Gammon for the same reason.
I am not keen on marmalade on its own, but it really does work for some dishes when cooking, so I urge you to give it a try if you’re on the fence on this one.
Other perhaps surprising ingredient shortcuts are ketchup in my Slow Cooker Honey Garlic Chicken and peanut butter in my Slow Cooker Chicken Satay!
Sausage Tray Bake Ingredients

- Onions – Red or white onions are fine.
- Vegetables – I usually use leeks and baking potatoes, but feel free to add more.
- Pork sausages – Use whichever sausages you like. The cooking times are for large, thick sausages. If you are using thinner chipolata-type sausages, they will take less time to cook, so roast your veggies for one hour (in total) but add your sausages during this time, according to pack instructions.
- Olive oil – Regular, NOT extra virgin.
- Flavouring – Dried thyme, salt and freshly ground black pepper.
- Marmalade – The secret ingredient! Any kind. See notes below for more on this.
How to make Sausage Tray Bake

1. Put the vegetables and sausages onto a baking tray and toss together with oil, thyme and seasoning.

2. Bake until the sausages are starting to turn golden, flip them and spoon on the marmalade. Continue to cook as per the full recipe below.
Substitutions
- Sausages – If you prefer you could try chicken sausages if you don’t eat pork, or veggie sausages will be great too. Just check timings and adjust the instructions if you need to.
- Vegetables – You can choose any equivalent of root veg, which always roasts the best. But always go for what you and your family enjoys the most, bearing in mind some ingredients may need less time in the oven.
Leftovers
In the fridge These are great for leftovers as a lunch or dinner another day! You can keep this recipe in the fridge for up to 3 days. Reheat fully in the microwave or in the oven (covered with foil) before serving.
In the freezer This recipe doesn’t freeze particularly well as the ingredients might break apart when defrosting and reheating again. That said, you can freeze it, it just won’t be at its best.
Recipe Tips
Marmalade!
This is the secret ingredient to getting that sticky, sweet sauce. But shhh… don’t tell the kids! They will love it to eat but, if I told them what it was? Probably not!
Any type of marmalade is fine to use. Even if you think you don’t like marmalade (I would never eat it on toast ordinarily), please give it a go in this. It’s just such an easy shortcut to heaps of taste.
Casserole mix
This is one of my favourite kitchen hacks. Sometimes supermarkets stock bags of pre-chopped vegetables (Aldi and Waitrose both do I know, but not all year sadly!)
If you can get hold of these, substitute the chopped vegetables in the recipe for 2 bags. The one I use includes potatoes. If yours doesn’t, you can also add these in separately.

Sticky Sausage Tray Bake {Easy & Delicious}
Ingredients
- 2 Onions, Peeled and cut into chunks
- 3 Carrots, Peeled and cut into chunks
- 2 Large leeks, Washed well and cut into large chunks
- 4 Large baking potatoes, Cut into large chunks
- 500 g (1.1 lb) Pork sausages
- 1 tbsp Olive oil
- 1 tbsp Dried thyme
- Salt and pepper
- 100 g (3.5 oz) Marmalade
Instructions
- Preheat the oven: This needs to be at 200°C fan/220°C/425°F/Gas Mark 7.
- Everything onto the tray: Put the vegetables and sausages onto a baking tray and toss with the olive oil, thyme and salt and pepper.
- First cook: Bake for 45 minutes or until just starting to turn golden.
- To finish: Flip the sausages, spoon over the marmalade and cook for a final 15 minutes.

This was absolutely delicious! So easy to make, chopped the veg up threw it all in a pan, added the sausages and seasoning and shoved in the oven. I used courgettes instead of leeks and my 3 children all ate it all up. My daughter had seconds. It’s a relatively cheap meal but also packed full of vegetables so that’s always a bonus. Myself and my partner loved it too. Will definitely make this again. Thank you

I have made this twice now, the second time omitting the leeks. Each time it has required a little longer to brown up nicely. Are the temperature settings for conventional or fan ovens on this site?

Easy and delicious
Have made this recipe so many times now .And doing it today my husband and i love it .
A family favourite all year round – really easy to make, really easy to change and add different veg depending on the season. Love it!
I love this recipe and have cooked it at least 5/6 times. I have tinkered with the recipe a bit.
1) I put the leeks in about half way through the cooking time so they stay leeky!! In my oven an hour leaves them too crispy for me.
2) I sometimes use pork and apple sausages. This is delicious, but the sugar in the sausages browns them more quickly. They would only need max 40 mins in the oven.
3) I have played around with the glaze. Apple and sage jelly is a delicious substitute as is redcurrant jelly.
