Is it really a lasagne? No. Is it layered pasta with tomato sauce and cheese on top? Kind of. Is it ready in 10 minutes for a fuss-free, super-fast feast? Oh YES! It’s also really delicious, and tastes as though far more effort has gone into it than really has.
I love it when I find a new budget meal that’s easy but pleases everyone at dinnertime because it’s a bit different and has loads of flavour. The ingredients are simple and cheap too, so can have them in the cupboard ready for busy days.

What kind of tortellini should I use for this recipe?
You can use the dry or fresh fridge kind from the supermarket. I used 2 x 250g packs of Spinach and Ricotta Tortellini.
Is this a vegetarian pasta recipe?
Yes, it is if you use the same pasta I have used, or a different meat-free option (eg. three cheese; tomato and cheese).
If you’d prefer to add some meat to this recipe instead, use a meat-filled tortellini (eg. ham and cheese; chicken and bacon).
How do you make this Spinach and Ricotta Tortellini Lasagne?
Cook the pasta for about five minutes, adding the spinach to the saucepan near the end.
When done, put in a shallow casserole dish. Meanwhile, mix up the sauce ingredients of passata, garlic powder, oregano, honey, tomato puree and salt and pepper.
Pour the sauce over the pasta and top with mozzarella. Put under the grill for about five minutes until golden.
What can I serve this meal with?
You can serve this up on its own for ease, but if you’d prefer to add some sides, stick to a simple green side salad and perhaps some garlic bread.

Spinach and Ricotta Tortellini Lasagne {10 Minute Meal}
Some days just call for a quick, delicious, budget-friendly, cheat's recipe, and that's just what this 10 minute pasta dish is.
Ingredients
- 500 g Tortellini I used 2 x 250g packs
- 240 g Spinach
- 150 g Mozzarella
For the sauce:
- 500 g Passata
- 2 tsp Garlic powder
- 2 tsp Oregano
- 3 tsp Honey
- 2 tbsp Tomato puree
- Salt and pepper
Instructions

Preheat the grill to HIGH.

In a large pan of salted boiling water cook the tortellini according to pack instructions (usually 5 minutes).

Mix up the sauce ingredients.

1 minute before the end of the pasta cooking time, add the spinach to the boiling water. Drain the pasta and spinach (make sure you drain well so that the finished dish isn't watery).

Put the pasta and spinach into a shallow casserole dish or roasting tin, pour over the sauce, cover with the mozzarella.

Pop under the grill for 5 minutes until golden.

Yes! It will just take longer to boil in with the pasta so add it earlier.

Mine was spinach and ricotta but whichever you fancy is good.
