Is it really a lasagne? No. Is it layered pasta with tomato sauce and cheese on top? Kind of. Is it ready in 10 minutes for a fuss-free, super-fast feast? Oh YES!

It’s also really delicious and tastes as though far more effort has gone into it than really has.

About this recipe

I love it when I find a new budget meal that’s easy but pleases everyone at dinnertime because it’s a bit different and has loads of flavour. 

The ingredients are simple and cheap too, so you can have them in the cupboard ready for busy days or even weekends when you can’t be bothered to cook.

Tortellini Pasta Bake Ingredients notes

  • Tortellini – You can use the dry or fresh fridge kind from the supermarket. I use 2 x 250g packs of fresh Spinach and Ricotta Tortellini.
  • Homemade sauce: This is a simple tomato pasta sauce – so much healthier than the processed stuff you get in a jar and it’s so easy! It’s made up of pasta, garlic granules, oregano, honey, tomato puree and a bit of salt and pepper.

Substitutions

  • Fresh pasta – This is a vegetarian recipe but if you’d prefer some meat, you can just choose a different tortellini filling in the supermarket (eg. ham and cheese, chicken and bacon).

Reheating leftovers

In the fridge You can keep this recipe in the fridge for 3 days, although bear in mind this might be a little mushy when you reheat it as fresh pasta is more delicate.

Spinach and Ricotta Baked Tortellini Lasagne {10 Minute Meal}

Some days just call for a quick, delicious, budget-friendly, cheat's recipe, and that's just what this 10 minute Baked Tortellini pasta dish is.
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes
Servings: 4

Ingredients 

  • 500 g Tortellini, I used 2 x 250g packs
  • 240 g Spinach
  • 150 g Grated mozzarella

For the sauce:

  • 500 g Passata
  • 2 tsp Garlic granules
  • 2 tsp Dried oregano
  • 1 tbsp Honey
  • 2 tbsp Tomato puree
  • Sea salt and freshly ground pepper

Instructions 

  • Preheat the grill to HIGH.
  • In a large pan of salted boiling water cook the tortellini according to pack instructions (usually 5 minutes).
  • Mix up the sauce ingredients.
  • 1 minute before the end of the pasta cooking time, add the spinach to the boiling water. Drain the pasta and spinach (make sure you drain well so that the finished dish isn't watery).
  • Put the pasta and spinach into a shallow casserole dish or roasting tin, pour over the sauce, cover with the mozzarella.
  • Pop under the grill for 5 minutes until golden.

    A great quick meal. I was pleasantly surprised by this meal. It was actually really tasty and felt so much more of a meal than the filled pasta on its own, kids loved it too.. Such a great one to have tucked away for super speedy meals. Thanks!
