What a season to be alive when it’s acceptable to make a warming, boozy, creamy Baileys Hot Chocolate! Pop a few ingredients into your slow cooker and an hour later you’ll be in heaven.

Baileys hot chocolate made in a slow cooker with cream and cocoa, with marshmallows on top.

This is the ULTIMATE decadent winter’s treat you simply must indulge yourself with, be it Christmas time or any time when the weather outside is frightful.

I’m going to commit a festive sin and admit that I was never a big fan of Baileys Irish Cream liqueur.

But one cold winter’s night, I went shopping and came home and needed warming up… and this just somehow happened.

I made this Slow Cooker Baileys Hot Chocolate in a saucepan on the hob that night but have since tailored the recipe to make it in a slow cooker, because this way it gets ready on its own and stays warm for when the grown ups are ready to dive in, be it from a frosty walk or being served at a party.

Of course, you can make it in a regular pan if you prefer though!

Why you’ll love this Baileys Hot Chocolate recipe

⭐️ An impressive, decadent drink to serve up or indulge in yourself

⭐️ Great way to use up Baileys

⭐️ Cooks slowly and stays warm until you’re ready

Make a non-alcoholic hot chocolate

If enjoying a hot chocolate this way appeals to you but you don’t want a boozy one, try out my regular Slow Cooker Hot Chocolate instead.

But if you do want boozy but don’t like drink recipes with Baileys, you could try this recipe using amaretto, kahlua, Frangelico or rum instead.

Baileys Hot Chocolate Ingredients List

  • Baileys – This recipe uses 200ml, although feel free to measure with your heart! Any non-branded version of the famous Irish cream liqueur would also work the same
  • Cocoa powder – If you can, using good quality cocoa will make a big difference. I use this one Organic Fairtrade Cocoa Powder
  • Dark chocolate – The same goes for the chocolate. I use Callebaut 54% Dark Chocolate Chips – this chocolate is amazing and makes such a difference to all of my finished makes and bakes. If you buy in bulk, it works out to about the same price as supermarket chocolate too
  • To make creamy – Double cream and condensed milk are a marriage made in creamy heaven!

How to make Baileys Hot Chocolate

  1. Pour everything into your slow cooker or crock pot and cook on low for at least 1 hour or until you want to serve.
  2. Stir well and serve with your chosen topping.

Serving suggestions

I love mine topped with whipped cream, marshmallows and chocolate sauce. YUM!

Leftovers

You can adjust the quantities to the number of servings you need, however if you still have leftovers, it will keep fine in the fridge for up to 3 days.

Reheat it on the hob when you’re ready to enjoy it again. This will burn some of the alcohol off so feel free to add more Baileys if you do!

FAQs

Can I use milk instead of cream and condensed milk?

You could go for skimmed or semi skimmed instead if you want, but be aware it will be a thinner consistency and not quite as luxuriously creamy.

Can I make this if I don’t have a slow cooker?

Yes, simply add everything to a large saucepan and cook over a low heat, stirring occasionally for 15-20 minutes. Be careful not to let it boil.

Do you have any more recipes with Baileys?

Yes I do! Try my Baileys Fudge, Bailey’s Cheesecake and Panettone Bread & Butter Pudding with Baileys. All totally indulgent and delicious.

  1. Oh wow. I don’t normally even like hot chocolate but the Baileys and slow cooker easiness made me think I’d try for Xmas. WOW. Heaven!
