This is an unbelievably quick and easy Baileys Fudge recipe! Made just with condensed milk, chocolate and Irish cream liqueur in the microwave, it’s a delicious and impressive festive treat.

My collection of fudge recipes are notoriously simple and speedy, but have big results. 

None more so than this festive Baileys Fudge offering. It’s perfect for homemade gifting at Christmas or simply as a festive treat. 

With this, the chocolate sets the fudge and the condensed milk adds the sweetness and texture. The Baileys gives that unmistakable hit of delicious Irish cream!

Sarah’s Notes

This is not traditional fudge, where you boil and cook cream. This is my really simplified version, which is far less faffy and trust me – the results are fantastic.

I pack the pieces of fudge, fresh from the fridge, into little bags like these cellophane bags. Tie them with some Christmas ribbon for a special something.

You can cook this creamy Baileys Fudge in a microwave or a slow cooker. Of course it’s SO much quicker in a microwave though.


Baileys Fudge Ingredients Notes

  • Chocolate – I say this is 3 ingredients, but technically it’s 4 as I use 2 different types of chocolate – milk and dark. I used my favourite Callebaut chocolate for this recipe. It melts so well and really makes a difference to any recipe. When you buy it in bulk (1kg bags at a time) from Amazon it works out to about the same price as supermarket chocolate. A good investment I think as it really does make SUCH a difference
  • Condensed milk – Be sure to use condensed milk, NOT evaporated milk or ready made caramel
  • Baileys Irish Cream – You can use an Irish cream alternative for this classic too if you prefer

How to make Baileys Fudge

  1. Break your chocolate into small pieces, place into a large microwavable bowl along with your condensed milk and Baileys. 
  2. Microwave for 30 seconds, then beat well. Repeat once or twice until very thick and smooth.
  3. Pour into a lined dish. Smooth out and add sprinkles if using. Refrigerate overnight.
  4. Cut into small cubes and store in the fridge until needed.

How to make fudge in the slow cooker

You can also make this fudge in your slow cooker or crock pot. It will take about 40-50 minutes. Beat regularly. Depending on your particular slow cooker, this may take a little more or less time. 

As soon as it’s thick and silky smooth looking, it’s ready. If your mixture looks like it’s a bit lumpy or splitting, you can resolve this by giving it a really really good beating with a wooden spoon. It should soon come together again.

Storing

In the fridge

They will go quite sticky at room temperature so keep them in the fridge.

There doesn’t seem to be any hard and fast rules on this, but I’ve kept it in the fridge 1-2 weeks and it’s been absolutely fine.

It will go really quite firm, so just let it soften a little before eating.

Extras

You can add extra flavourings if you’d like, like this gorgeous vanilla extract (it’s THE best!)

Chocolate mix

I used half milk chocolate and half dark chocolate in the fudge this time – it is really personal preference. Using all milk chocolate gives a really creamy flavour, whereas dark chocolate provides a delicious contrast to the sweetness of the Baileys Irish cream.

Cutting into portions

If the slab is too hard to cut straight out of the fridge, allow it to come to room temperature for 30 minutes. Be careful when cutting as it may be very hard!

Line the tin

Make sure that you do use baking paper (or parchment as it’s sometimes called) to line the tin. (I like this one, available on Amazon: Bacofoil Baking Parchment.)

Type of tin

Use a fairly small dish to get a nice, deep fudge. (I like this one, available on Amazon: Masterclass 23cm Tin.)

What is Baileys Fudge?

Fudge is a sweet treat, and the traditional way to make it is to boil sugar, condensed milk and butter. This is a simplified version (that is every bit of good, in my opinion!)

Baileys Fudge is simply a flavouring of this fudge, which is perfect for Christmas time as a treat to yourself or as a delicious homemade gift.

Can you use evaporated milk instead of condensed milk?

Unfortunately you simply can’t substitute the condensed milk for anything else.

While you could use evaporated milk in place of milk in many situations, evaporated milk and condensed milk are completely different.

Evaporated milk is condensed milk without added sugar, and has an entirely different thickness and texture.

Help! My fudge is very sticky!

If the fudge is very sticky, cut it up and then return to the fridge on a plate or board lined with baking paper, separating the pieces a little so that the air can get to them. This can help to ‘dry’ the pieces out a little.

  • 350 g Milk chocolate, See notes
  • 397 g Condensed milk
  • 150 ml Baileys Irish cream

For decoration (optional):

  • Sprinkles, Christmas-themed

Instructions 

  • Break your chocolate into small pieces and place into a large microwavable bowl, along with your condensed milk and Baileys.

    Just made this for the first time and gave it out to friends and family. Everyone loved it! Although they said they couldn’t taste the Baileys they said it was a delicious dark chocolate fudge and asked for more. I feel I may have done something wrong to not get the taste of the Baileys through so will have to keep making it until I do. Oh well!😆

    Delicious! So easy. I’ve been looking for a way to use up some Baileys for a while. So glad I found this. How long will it keep in the fridge (I know, it will be eaten fast!) as I wonder if I can make it well ahead of Christmas. Or would it freeze and defrost ok do you know?
