Sarah’s Notes

Even if you think you don’t like marmalade (hello that’s me!) please give this a try.

Along with a little honey, it’s a shortcut to a deliciously sweet and sour coating for your ham.

This joint works well as an alternative roast dinner, or in sandwiches (hot or cold) or sauces.

Air Fryer Gammon Joint Ingredients

The ingredients for making a gammon joint in an air fryer laid out on a white counter. Gammon, marmalade and honey.
  • Gammon joint – I use a 750g unsmoked gammon joint, based on 4 people sharing this as a main meal, but you can swap your weight according to your needs. Go for a boneless joint for ease
  • Glaze – This recipe makes Sticky Air Fryer Orange & Honey Glazed Gammon, using marmalade and runny honey. The coating really gives delicious results, but you can obviously leave this off if you prefer it plain

Air Fryer Honey Glazed Gammon Leftovers & Storing

In the fridge If you are eating the ham cold, it will be fine in the fridge for up to 3 days. Wrap it up well.

In the freezer You can freeze this either chopped up or in slices. Defrost thoroughly before enjoying cold.

Gammon Joint Air Fryer Temperature

Cook this at 160℃. This low temperature ensures that the inside of the ham is cooked without burning and drying the outside of the meat.

FAQs

How long does it take to cook gammon in an air fryer?

In total, this recipe takes about 1 hour 10 minutes. The first hour, it cooks in a foil parcel to make sure it’s succulent and cooked through. For the last 10 minutes, we cook the gammon joint uncovered to get a little coloured crust.

How do I know when the ham is cooked?

If you’re using the timings in this recipe, you should be fine, but to know for sure, you could  invest in a meat thermometer.

This is the one I have found to be the most reliable and I use it all the time for many recipes. It’s not the cheapest option but it’s better than many I’ve tried.

The ham is cooked once the internal temperature reaches 71℃ (according to the Thermapen website).

Should I wrap the gammon in foil in the air fryer?

Yes! This keeps the flavour of the glaze in and keeps the meat moist too. Use a double layer of foil for durability, but make sure the parcel opens at the top so you have easy access without spilling.

Should I line the air fryer?

Definitely! Be sure to line the air fryer well (with the tin foil or another liner) as the marmalade will be very difficult to scrub off otherwise!

Why do I need to score the gammon?

Slicing into the gammon joint opens small slits up in the fat and meat, which allows flavours to infiltrate into it to marinate, giving a greater depth of flavour. It also allows the fat to crisp up and looks attractive once it’s cooked.

To do this, simply take a sharp knife and slice in lines at an angle across the joint, then do the same in the opposite direction, making diamond shapes as you go.

What’s the difference between gammon and ham?

They’re the same thing! Gammon is the meat in its raw form, ham is what it’s called when it’s been cooked.

Can I cook gammon in the slow cooker?

Yes! Follow my Slow Cooker Gammon recipe here for all the tips and tricks you need.

What should I serve with Air Fryer Gammon?

You can use this as a roast dinner meat, so alongside potatoes and vegetables, or with your favourite ham accompaniments, like chips or wedges, egg, pineapple or jacket potatoes.

What dishes can I use the ham in?

You could use it in Pea & Ham Soup, Chicken & Ham Pie, Loaded Potato Skins or Chicken and Bacon Pasta. So much on offer!

Made this for the first time today and I’m sold! So much easier and less messy than slow cooker way of doing. Plus very little intervention needed which is great when running around after kids.
