Sometimes I want to serve up a vegetarian family meal sharing plate that doesn’t involve lots of time and effort, and this Veggie Loaded Nachos recipe is perfect for those days when corners just have to be cut.

Layer it up, grill for 5 minutes and you are good to go.

Is it the most nutritious meal you’ll ever make? Probably not. But is it quick, tasty and includes a couple of portions of veg? YES!

How do I make quick Veggie Loaded Nachos?

Put a layer of nachos on a grill-proof baking sheet. Put the sweetcorn and taco beans on top, add the cheese and another layer of nachos. Pop it all under the grill for five minutes, making sure to keep an eye on it so it doesn’t burn. That’s it!

Can I add meat to this nachos recipe?

Yes, you can add beef mince or pieces of chicken. Fry it with some taco seasoning, which will give you the flavour you’re after.

What can I serve this dish with?

I top the nachos with some lettuce, salsa, guacamole and serve with lime wedges.

If you’re using this as a side dish or starter, you could serve it before something like my Slow Cooker Pork Carnitas for guests, or alongside my Easy Chilli Con Carne recipe.

Which cheese should I use?

Use whichever grated cheese you prefer. Cheddar cheese is great for flavour. Mozzarella is good for the melted satisfying cheeeesy pull!

Veggie Loaded Nachos {10 Minute Meal}

This easy, simple, budget-friendly vegetarian meal can be thrown together for a quick midweek dinner.
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes
Servings: 4

Ingredients 

  • 400 g Nachos, I used 2 x 200g bags from Aldi
  • 340 g Can sweetcorn, Drained
  • 395 g Taco beans, See notes
  • 100 g Grated cheese
  • 1/2 Iceberg lettuce, Shredded
  • 150 g Guacamole
  • 200 g Salsa, See notes
  • 2 Limes, To serve

Instructions 

  • Heat the grill to HIGH.
  • Pile a layer of nachos on a grill-proof roasting tin or on a baking sheet. Follow with sweetcorn and the taco beans.
  • Add some cheese and another layer of nachos.
  • Pop under the grill for 5 minutes. (Keep an eye on it. It will go from uncooked to burned in a couple of seconds!)
  • Top with lettuce, guacamole, salsa and serve with lime wedges.

Notes

Taco beans: 
The ones I used are from Aldi. They are mixed beans in a taco-style sauce, but any beans in spiced sauce would work well.
Salsa:
Choose the fresh-type salsa for the fridge rather than jarred. It's so much nicer!

  1. I love how easy and versatile your meals are. I had some mince that needed eating so I cooked it with the beans and sweetcorn beforehand. (Kinda defeats the object of it being vege I know!) it was delicious though, thanks!

  2. Made this tonight- was delicious! And eaten by all- didn’t have guacamole and too lazy to make it so just chopped up a avocado and put on top! Thanks again for making dinners easy!
