Sarah’s Notes

You may already be familiar with this Tuscan-style creamy dish from my other variations on Marry Me Chicken, but in case you don’t know…

I adapted my own version of this dish a while ago (so good it’ll make your diners want to marry you, as the story goes).

I thought it would lend itself perfectly to my slow cooker collection, and after plenty of testing, I was right!

Unlike my pasta dishes, this one will probably need a side dish to go with it. There are a few ideas below, or keep things simple with some microwave rice just before serving.

Slow Cooker Marry Me Chicken Ingredients

The raw ingredients for Slow Cooker Marry Me Chicken laid out in small bowls on a white counter top.
  • Chicken – We’re using 650g/1.4lb of skinless and boneless breasts for this recipe, which is about 4 breasts, cut into bite-sized chunks.
  • Sun dried tomatoes – The type in an oil-filled jar, not the dry ones.
  • Garlic – I use peeled and crushed fresh garlic here, but feel free to use pre-prepared from a jar or frozen.
  • Chicken stock cube – Just add this to the slow cooker with the water measured, no need to dilute further.
  • To stir in once cooked – Cream cheese, grated parmesan, fresh basil, sea salt and ground black pepper.

How to make Slow Cooker MArry Me Chicken

1. Toss the chicken in the plain flour with plenty of salt and pepper until it’s well coated. Put in to the slow cooker.

2. Add the garlic, sun dried tomatoes, oregano, paprika, stock cube and boiling water. Cook as per the recipe below.

Leftovers

In the fridge You can keep this recipe cooked in the fridge for 3 days. Reheat fully in the microwave or on the hob before serving.

In the freezer Creamy sauces don’t freeze overly well and the chicken would be a little dry when you’re reheating it from frozen, however I wouldn’t let it go to waste. If freezing is your best option, you can do so, it may need a little extra liquid (water) to be added as you reheat it.

FAQs

Can I make this dairy Free?

Yes, sure. Just swap the cream cheese and parmesan for dairy-free alternatives and you’re good to go.

Where does Marry Me Chicken come from?

I became aware of it to start with on Pinterest and Tik Tok. I looked at lots of online recipes and discovered that this chicken-in-a-vaguely-Italian-style-cream-sauce was coined by American food publication Delish, because it was even better than Ina Garten’s much-loved ‘Engagement Roast Chicken’ recipe (who is a national foodie treasure in the US) – according to Today.

I decided to have a go at it, but with my own tweaks that I thought it needed, while keeping the main ingredients in common with the original: chicken, cream, sun dried tomatoes and parmesan (although I have swapped cream for cream cheese for the slow cooker version so there’s no curdling.)

While I love the chicken recipe on its own, the flavours are so adaptable, which is why making this a super family friendly meal is so achievable.

Can you recommend a good slow cooker?

The Morphy Richards Sear & Stew Slow Cooker is my all-time favourite because you can use it for initial browning on the hob and it’s really light.

I wrote up a whole slow cooker review though, where you might find another one to suit your needs. Have a read here.

Slow Cooker Marry Me Chicken

What’s better than adapting our favourite recipes for those busy days when we have no time or energy to cook in the evening? A slow cooker version of Marry Me Chicken, of course! Preps in minutes and tastes SO good.
Prep Time: 5 minutes
Cook Time: 3 hours
Total Time: 3 hours 5 minutes
Servings: 4

Ingredients

For the Slow Cook:

  • 650 g (1.4 lb) Skinless, boneless chicken breast, About x4, cut into bite sized pieces
  • 30 g (0.25 cups) Plain flour
  • 3 Garlic cloves, Peeled and crushed
  • 100 g (3.5 oz) Sun dried tomatoes, Drained and very finely chopped
  • 1 tsp Dried oregano
  • 2 tsp Paprika
  • 300 ml (1.25 cups) Boiling water
  • 1 Chicken stock cube, undiluted, crumbled

To Finish:

  • 100 g (3.5 oz) Cream cheese
  • 50 g (0.5 cups) Parmesan, Grated
  • 15 g (3 tsp) Fresh basil leaves
  • Sea salt and freshly ground black pepper

Instructions

  • Toss chicken in the plain flour with plenty of salt and pepper until well coated.
  • Put into the slow cooker with the garlic, tomatoes, oregano, paprika, crumbled stock cube and water.
  • Cook on HIGH for 2.5-3 hours or LOW for 5-6 hours until the chicken is cooked through.
  • Mix in the remaining ingredients just before serving.

Notes

Sun Dried Tomatoes – Use the type in jars in oil. Drain the oil and pat dry. Be sure to cut these up very very finely. If they are left too large they can be a little chewy when slow cooked. Cut up very small, they just add lots of flavour and almost melt into the sauce.

Plain Flour – Plain flour is the same as all-purpose flour. A 1/4 cup is the equivalent of 1 ounce.

So easy to make and thrown into the slow cooker! My first ever recipe done! Delicious 😋Had with steamed veg and rice the first night and the leftovers with pasta the next day.

made this twice now. Underwhelming both times sadly. First time used breast like recipe said – the chicken went very dry. 2nd time used thigh which was much better.
Perhaps adding some white wine might help?

    1. Hi Linda, chicken breast is very easy to overcook in the slow cooker, do you have a meat thermometer? I’d suggest next time you cook using your slow cooker and chicken breasts, test them for timing to make sure they are just cooked. It may be that your slow cooker is particularly hot! Hope that helps 🙂

Done this a few times now, the easiest way to do the tomato’s I have found is to blend everything and add it to the chicken as a sauce

So I substituted the sun-dried tomatoes cuz I had none with rotel and that was out of this world good! Will make this again! Shredded it as well and put on rice.

Absolutely delicious! Full of flavour and the chicken was tender
Our younger friend has just become engaged and we found this recipe and chose it under her circumstances as the title was very appropriate. She loved the idea!
We like garlic and I automatically put more cloves in and lazily didn’t pat the sundried tomatoes just drained them. Don’t all cooks adapt from time to time?

    Will definitely make again
    Thank you for the recipe

I have made this several times and do tend to tweak amounts slightly but always stick to the main recipe pretty closely. It’s a favourite in our house, my husband loves it but I can’t vouch for the proposal as he was already my husband before I made it the first time! I’ll be making this in the future many more times. Delicious, good thickness of sauce and love the sundried tomatoes adding some flavour.

    Omg, this is amazing!!!
It’s so creamy and full of lots of flavours. You can add it to rice, pasta or even be cheeky and add it to chips!

Thank you for sharing this recipe
