This pesto chicken bake is an easy, one pan, oven baked, family dinner. It's also dairy free and gluten free and packed with two portions of colourful vegetables.

What is more satisfying than a complete one-pan meal that you can prepare, stick in the oven, with very little faff or fuss required? This Pesto Chicken One Pan Bake is a big favourite in my house and I just love how easy it is to make.

Here we have chicken breast pieces marinated in delicious green pesto, alongside crispy pesto roast potatoes, vine tomatoes and green beans. One pan bakes… I salute you!

If pesto pasta goes down in your house as well as it always has in mine, then here is another string to your bow, because pesto doesn’t only go in pasta! The delicious, rich basil sauce goes so well with meat and vegetables too, and what better way to prepare it than throwing it all in one pan?!

How do you make Pesto Chicken Bake?

Coating chicken breast in ready-made pesto is the simplest and easiest way to make this recipe. Just bake until tender and you’re ready to serve. In this dish I’ve added potatoes and vegetables to complete the one-pan meal, which is full of that rich, yummy pesto flavour.

Is Chicken Pesto healthy?

This recipe is a great healty option meal as it contains under 500 calories and 2g of saturated fats. It also has two portions of vegetables. (This will depend on the brand of pesto you use).

Can I use the leftovers?

Yes! You can make ahead for a fantastic pre-prepared lunch or use the leftovers for a salad or in a pasta the following day.

What else can I add to this recipe?

You could add some pine nuts when you add the green beans and tomatoes to add texture and flavour. Broccoli or sliced courgette would also work well in this dish. You could also substitute the chicken mini fillets for slice chicken breast or pieces of turkey.

Pesto Chicken {One Pan Bake}

This pesto chicken bake is an easy, one-pan, oven-baked family dinner. It's also packed with two portions of colourful vegetables. 
Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 1 hour
Servings: 4 People

Ingredients 

  • 750 g New potatoes
  • 2 tbsp Olive oil
  • 500 g Mini chicken fillets, See notes
  • 120 g Pesto, See notes
  • 300 g Fine green beans
  • 400 g Cherry tomatoes
  • Salt and pepper

Instructions 

  • Pre heat the oven to 200C.
  • Put the potatoes and olive oil into the pan, toss the potatoes until coated and bake for about 30 minutes, until starting to soften.
  • Add the chicken fillets and then spoon the pesto on top of the potatoes and chicken. Put back into the oven for 10 minutes.
  • Add the green beans and tomatoes, with salt and pepper and toss in the pesto-y juices. Put back into the oven for 10 more minutes or until the chicken is cooked through.

Notes

Chicken
I used Mini Fillets here as they are an easy size to cook and coat in the sauce (and fit in the pan!) but any cut of chicken would work, you'll just need to adjust the cooking time accordingly and of course, always check that the meat is cooked before serving.
Pesto
You can use your favourite green pesto jar of choice, or you can make your own homemade pesto. You can get gluten free pesto too, if that's for you.

    Yumm! I added some garlic powder to the potatoes and cooked chicken with some pesto on stove before putting it all together in oven to reduce cooking time by 10 minutes. Would cook again!

    Really tasty tray bake chicken meal. We had courgettes instead of green beans tonight, which were cooked just al dente, delicious. Wish my daughter would eat pesto just made it plain for her. Did get her to eat a pesto covered potato though!!

  6. This was delicious! Par-boiling the potatoes was a great idea. I also added pine nuts which were very tasty. The chicken was perfect, so soft and juicy! Will definitely cook again soon.
