There are cuts of meat that, when cooked simply, are just divine. Lamb Chops are one such delicacy – get them right and their flavour is out of this world.

If you want to perfect the art of cooking Lamb Chops, you’ll be glad to hear they’re honestly SO easy when you know how.

My favourite way to make them is nothing elaborate – a simple herby marinade and a quick cook is all that’s required (and being careful not to overcook them.)

I make these for simple midweek dinners AND special meals too, because they’re so speedy but also packed with flavour.

This recipe will walk you through how to cook Lamb Chops in a pan on the hob, in the oven OR in an air fryer, so all bases are covered!

What I love most about making Lamb Chops is how versatile they are. You can dress them up or down – they’re perfect in summer as well as winter, we can enjoy them as part of a big, hearty meal or a lighter one… you get the picture.

Knowing how to cook them perfectly means you always have the option up your sleeve for when a delicious dinner is called for.


Serving suggestions

You can serve Lamb Chops with different sides, depending on the time, effort and occasion in front of you.

In winter, I often serve these with something comforting like Dauphinoise Potatoes and Honey Roasted Carrots and Parsnips, if it’s a special meal. If it’s an average weekday, I’d probably go with mashed potato or wedges with a quick side of green veggies like peas or broccoli.

In summer, Lamb Chops go really well for a simple meal of Couscous and Beetroot Salad.


Lamb Chops Ingredients

  • Marinade – Fresh garlic, herbs (I use rosemary and thyme) and olive oil.
  • Lamb chops – Already cut from the butcher or supermarket.
  • To season – Freshly ground black pepper and sea salt

How to cook Lamb Chops

1. Bring your lamb chops up to room temperature and mix the garlic, herbs and olive oil together with the salt and pepper.

2. Use your hands to rub the oil all over the lamb chops. Cook on the hob or in the air fryer or oven, as per the full recipe below. Leave to rest under some foil before serving.


Leftovers

In the fridge Keep the cooked lamb chops in the fridge for 3 days and enjoy cold chopped into a salad or sandwich.

How long to cook Lamb Chops for

Lamb Chops are quite lean with only a little fat, so they are generally more delicious served medium rare with a little pink still in the middle. 

Depending on the size of the chops, I find this is about:

  • Pan frying: 2-4 minutes on each side
  • Oven cooking: 15-20 minutes
  • Air frying: 8-12 minutes

If you have a meat thermometer, you want to get your lamb to somewhere between 54-60℃ for medium rare. 

Meat always increases in temp a little when it’s resting so don’t be afraid to take it out a few degrees before the temperature you’re aiming for.

Remember, while this is an easy recipe, we really don’t want to overcook the meat, so do pay attention to the timings as they cook quite quickly.

Perfect Lamb Chops {Hob, Oven & Air Fryer}

Get perfect, juicy Lamb Chops with this recipe for the hob, oven or air fryer, every time. However you cook them, they’re quick, easy and totally delicious!
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 4

Ingredients 

  • 1 Garlic clove, Crushed
  • 2 tbsp Finely chopped herbs, We like rosemary and thyme
  • 2-3 tbsp Olive oil
  • 8 Lamb chops
  • Sea salt and freshly ground black pepper

Instructions 

On the hob:

  • Bring your lamb chops up to room temperature.
  • Mix the garlic, herbs and 2 tbsp olive oil together with some salt and pepper. Use your hands to rub the oil all over the lamb chops.
  • Heat 1 tbsp olive oil in a large frying pan over a medium high heat and fry the chops for a minute or so on the fatty edge first, then 2-4 minutes on each side, depending on how 'done' you like them.
  • Leave to rest under some foil for 5 minutes before serving.

In the oven:

  • Preheat the oven to 200℃ fan/390F, 220℃/420F or Gas Mark 6. and bring your lamb chops up to room temperature.
  • Mix the garlic, herbs and 2 tbsp olive oil together with some salt and pepper. Use your hands to rub the oil all over the lamb chops.
  • Lay the lamb out on a large baking tray and roast in the oven for 15-20 minutes, until the lamb is cooked to your liking.
  • Leave to rest under some foil for 5 minutes before serving.

In an air fryer:

  • Preheat the airfryer to 200℃/390F and bring your lamb chops up to room temperature.
  • Mix the garlic, herbs and 2 tbsp olive oil together with some salt and pepper. Use your hands to rub the oil all over the lamb chops.
  • Lay the lamb out in the air fryer tray and cook for 8-12 minutes, turning the chops over half way, until the lamb is cooked to your liking.
  • Leave to rest under some foil for 5 minutes before serving.

Notes

How to know if the Lamb Chops are cooked perfectly: If you have a meat thermometer, you’re looking for 56-60℃ for medium rare. Meat always increases in temp a little when it’s resting so don’t be afraid to take it out a few degrees before the temperature you’re aiming for.
