I am 100% here for the trend of a fancy salad piled up in a ‘bowl’, mainly thanks to it giving us this beautiful Hummus Bowl!

This dish is so easy to pull together, with simple ingredients that make it look altogether more fancy than we secretly know it is.

Yes, we always like to make food from scratch but some ready-made cheat buys (like the falafels here) are just what you need to make a quick lunch or dinner when there’s limited time.

This can be served hot or cold and as part of your meal prepping.

Hummus Bowl Ingredients

  • Rice – I am using microwave rice pouches as a shortcut here. They’re my secret weapon for making super quick recipes. But feel free to cook your rice instead if you prefer
  • Falafels – I use ready-made falafels from the supermarket for this quick recipe. Choose your favourite kind
  • Feta – This adds so much flavour. Chop this Mediterranean cheese into cubes
  • Hummus – Again, I am using ready-made hummus here, but if you’d like to make your own from scratch, go ahead
  • Salad additions – I like chopped up cherry tomatoes and cucumber, but you could add whatever you like here
  • Olive oil – Use extra virgin or regular for drizzling
  • Salt and freshly ground black pepper – Remember to season well

How to make A Hummus bowl

  1. Cook the rice according to pack instructions.
  2. Heat the falafels according to pack instructions (or serve cold if you prefer).
  3. Pile the rice with all of the toppings into bowls.
  4. Drizzle with olive oil and salt and pepper.

Storing

In the fridge This is great to make ahead for lunch or dinner and will keep in the fridge for up to 3 days. 

In the freezer This dish isn’t suitable for freezing. However, ingredients such as falafels and cooked rice can be.

Optional: Adding meat to the recipe

You can add cooked meat or fish to this dish if you don’t want this as a vegetarian recipe.

You could use packs of cooked and flavoured chicken that most supermarkets sell, which would be another quick shortcut.

FAQ

Can I make this Hummus Bowl vegan?

Yes, ust check the ingredients in your falafels and leave out the feta cheese and/or use a cheese alternative.

Easy Hummus Bowl

This super simple 10-minute Hummus Bowl includes Middle Eastern flavour and Mediterranean freshness. Throw all the ingredients in together for a delicious bowl of goodness.

Ingredients 

  • 500 g Microwave rice pouches, 2 x 250g pouches
  • 400 g Falafels, 2 x 200g packs
  • 200 g Feta cheese, Cut into cubes
  • 200 g Hummus
  • 330 g Cherry tomatoes, Halved
  • 1 Medium cucumber, Cut into cubes
  • Olive oil to drizzle
  • Salt and freshly ground black pepper

Instructions

    A great summer dish especially when it’s too hot to cook for long. Really tasty ingredients and my vegetarian hating husband loves this dish.

    Loved this, so easy to make (well put together) and the flavours go so well. Does make me think why I do spend so much time in the kitchen when things can be really easy without being fast food. This is one to stay.
    Loving the meal plan this week so far are all winners in my house and great timing as I’m helping my mum move house so I’m pressed for time. I did use normal rice not microwave but chopped everything up and cleared the table in the time the rice took to cook. Thanks again for being so inspiring.
