Date Bark is a sweet treat that is unbelievably moreish and delicious. With chewy, wholesome Medjool dates, crunchy peanut butter, velvety melted chocolate, and a hint of saltiness, it’s your new favourite snack.

If you’ve discovered the wonder that is chocolate-covered dates with peanut butter – AKA a healthy adaptation of a Snickers Ice Cream bar – you will know what I am talking about when I say this combination is UNREAL. 

But a recent Tik Tok viral sensation brought to my attention that instead of faffing about with individual dates and covering them in melted chocolate, you can simply make a whole tray of it and break it up into bitesize pieces instead. Genius.

I give you… Date Bark. An absolute wonder and one I need in my freezer at all times.

What is Date Bark?

Edible ‘bark’ is usually a slab of something sweet, often chocolate like my Easter Bark here, and it involves melting ingredients together (into a tree bark-like surface – rough with bits embedded into it). It’s then set and broken up into pieces to eat.

I knew I had to create a really simple but delicious recipe when Date Bark came on my radar, because gooey dates + crunchy peanut butter + chocolate and sea salt? I was right. The results are divine. 

Here we’re using just 5 ingredients to create this healthy sweet snack with no sugar needed.


Homemade Date Bark Ingredients

  • Medjool dates – Use pitted dates or remove the stones yourself. You can use normal dates if you prefer but Medjool ones will give you a really squishy, carmel-like layer. They’re also full of fibre, antioxidants and natural sugars which give a natural energy boost.
  • Peanut butter – I prefer this kind but Date Bark is delicious with any nut butter, so use your favourite. If you use really crunchy peanut butter, you could leave out the chopped peanuts.
  • Salted peanuts – Roughly chop these up for some texture.
  • Dark chocolate – This is for melting over the top. My absolute favourite is Callebaut chocolate. It’s good quality, melts well and really makes a difference to any recipe. When you buy it in bulk (1kg bags at a time) from Amazon it works out to about the same price as supermarket chocolate. A good investment I think as it really does make SUCH a difference. You can then use it again for other bakes. 
  • Flaky sea salt – This is to sprinkle over the top and it takes the edge off the sweetness perfectly.

How to make Date Bark at Home

1. Slice down one side of the dates and lay them out next to each other on a sheet of parchment paper on a baking tray (full recipe below).

2. Cover with another piece of parchment paper and use a rolling pin or a glass to squish and press the dates into one layer. Carefully peel off the top sheet of parchment.

3. Spread the peanut butter over the dates.

4. Scatter over the chopped peanuts.

5. Pour the melted chocolate over the top and use the back of a spoon to help spread it out.

How to Store Date Bark

Dark Bark is best when kept in the freezer. You can enjoy it while it’s still frozen (like Snickers Ice Cream!) or it defrosts quickly, so leave for a few moments before eating.

Is Date Bark vegan?

Yes, it is vegan if you use vegan dark chocolate (most very dark chocolate is naturally vegan). Always check the labels on your ingredients to make sure though.

Is Date Bark gluten free?

Yes, it’s naturally gluten free, but always check the label of all ingredients for allergens to make sure there’s no cross contamination.

This energy-boosting chocolate Date Bark with peanut butter and Medjool dates is here to give us total joy. It's a heavenly tasting sweet treat that is also full of goodness and no refined sugar. It’s also SO easy to make and keep in the freezer, ready for a moment of bliss.

Ingredients 

  • 300 g (10.5 oz) Pitted Medjool dates, About 25
  • 100 g (0.5 cups) Peanut butter
  • 40 g (0.3 cups) Salted peanuts, Roughly chopped
  • 150 g (5 oz) Dark chocolate, Melted
  • Flaky sea salt

Instructions 

  • Slice down one side of the dates and lay them out next to each other on a sheet of parchment paper on a baking tray.
  • Cover with another piece of parchment paper. Use a rolling pin or the bottom of a glass to squish and press the dates into one layer before carefully peeling off the top sheet of parchment.
  • Spread the peanut butter over the dates then scatter over the chopped peanuts.
  • Pour the melted chocolate over the top and use the back of a spoon to help spread it out.
  • Sprinkle over the flaky salt and place in the freezer for 30 minutes before chopping into pieces.

Notes

Medjool dates: You can use normal dates if you prefer but Medjool ones will give you a really squishy, carmel-like layer. Remove stones or buy pitted.
