How we came up with this recipe

I have been trying to learn to love my air fryer recently (!) but I really dislike it when:

⭐️ I use it to cook part of a dinner, and have to use the oven or hob to cook another part of the meal.

⭐️ It doesn’t feed a family of 4 in full from one air fryer pan.

I wanted to come up with some easy one pan dishes that could serve a whole family and also not need any other cooked side dishes.

This one can be served with wraps or microwave rice for a complete meal DONE!

  • Chicken – We’re using about 4 breasts for this recipe
  • Black beans – These are the type in a tin that are already cooked, and they need to be drained and rinsed well
  • Veggies – I used onion and red peppers but you can swap in whatever you prefer
  • Fajita seasoning – Ideally use one that just has spices. Check the ingredients and choose one that doesn’t include ‘filler’ ingredients like salt or flour

How to make Air Fryer MExican Chicken Traybake

1. Put all ingredients into your air fryer, and cook as per the recipe below.

2. Shake vigorously halfway through cooking.


Substitutions

  • Beans – If you or your family don’t like these, you can leave them out or swap them for another kind of bean, or something else entirely, like sweetcorn
  • To make vegetarian – You can swap the chicken for a vegetarian/vegan protein option too, but adjust your cook times as required
  • Chicken thighs – You can use boneless skinless chicken thighs instead of breast if you prefer, but they will take a little longer to cook. Cut them small and adjust the cooking time to until they’re cooked through
  • Vegetables – Feel free to add any others of your choice

Leftovers

In the fridge You can keep this recipe in the fridge for 3 days. Reheat fully before serving or eat cold.

In the freezer This is fine to freeze. Wait until cooled then portion up and freeze. Defrost thoroughly before reheating.

My air fryer

The one in these photos is a Russell Hobbs XXL one.

I’ve tested 3 air fryers now, and while I’m not saying that this one is THE BEST EVER, I’m really happy with it. It’s easy to fit in the dishwasher, not too expensive and has a basket large enough for 4 people.

I cook this in my air fryer for 20 – 25 minutes, but the exact number of minutes it takes will depend on your machine, the size of your chicken chunks and whether you’re using breast or thigh meat.

FAQs

Can I leave the beans out of this recipe?

Yes, if you like. You can swap black beans for kidney beans or another kind of bean you prefer. Or just leave them out or swap them for another kind of vegetable. 

Which kind of fajita seasoning should I use?

Any brand is fine, but try to make sure you use one that is made up of only spices. 

Check the ingredients and choose one that doesn’t include ‘filler’ ingredients like salt or flour.

This Air Fryer Mexican Style Chicken Traybake has a delicious fajita flavouring with tender and succulent chicken chunks, crunchy vegetables and protein-packed beans. Ready in 25 minutes, it’s a super speedy and satisfying lunch or dinner for the whole family.
Prep Time: 2 minutes
Cook Time: 25 minutes
Total Time: 27 minutes
Servings: 4

Ingredients 

  • 650 g Chicken breast, Diced | Approx 4 breasts
  • 400 g Black beans, Drained and rinsed
  • 2 Red peppers, Seeded and cut into 1 cm strips
  • 1 Red onion, Peeled and sliced into 1 cm strips
  • 2 tbsp Fajita seasoning, See notes
  • 1 tbsp Sunflower oil
  • Sea salt and freshly ground black pepper, Pinch

Instructions 

  • Put all ingredients into your air fryer, and cook on 200C for 20 – 25 mins or until the chicken is cooked through.
  • Shake vigorously halfway through cooking.

Notes

To cook in the oven: You can cook this in the oven instead at 200C for the same amount of time
Serving suggestions: Microwave rice, tortilla wraps, salad, dips and nachos
