Air Fryer Mexican Chicken Traybake

This Air Fryer Mexican Style Chicken Traybake has a delicious fajita flavouring with tender and succulent chicken chunks, crunchy vegetables and protein-packed beans. Ready in 25 minutes, it’s a super speedy and satisfying lunch or dinner for the whole family.

Ingredients

  • 650 g Chicken breast Diced | Approx 4 breasts
  • 400 g Black beans Drained and rinsed
  • 2 Red peppers Seeded and cut into 1 cm strips
  • 1 Red onion Peeled and sliced into 1 cm strips
  • 2 tbsp Fajita seasoning See notes
  • 1 tbsp Sunflower oil
  • Sea salt and freshly ground black pepper Pinch

Instructions

  • Put all ingredients into your air fryer, and cook on 200C/400F for 20 - 25 mins or until the chicken is cooked through.
  • Shake vigorously halfway through cooking.

Notes

To cook in the oven: You can cook this in the oven instead at 200C/400F for the same amount of time
Peppers: The type of peppers used here are bell peppers
Serving suggestions: Microwave rice, tortilla wraps, salad, dips and nachos
Fajita seasoning: Ideally use one that just has spices. Check the ingredients and choose one that doesn’t include ‘filler’ ingredients like salt or flour
