This Homemade Instant Noodles recipe ticks all the boxes for a delicious vegetarian family meal.
You can prepare the ingredients ahead and leave in the fridge for a super-quick but healthy lunch, for when family members get home late, on those evenings when you know time is going to be tight, or just when you’re too tired for any extra effort!
Of course if you want to serve it all together in one dish, that’s also fine, just adjust the cooking time.
The trick here is using Straight to Wok noodles that cook in just a couple of minutes, no water needed. Brilliant shortcut.

Can I make this dish vegetarian?
Yes sure – just omit the pork or whichever meat you’ve gone for. All of the flavour will still be there from the sauce, noodles and veggies.
Can I use different vegetables?
You can change the veggies to what you have in or to your own taste. Just remember that they will only be in the microwave for a short amount of time, so choose something you like with a crunch or that cooks quickly.
How long will this keep in the fridge?
The beauty of this noodle recipe is that you can prepare it ahead of time for an even quicker cooking time.
If your dish contains meat, it will keep in a container in the fridge for up to 24 hours (or according to the pack instructions on the cooked meat). If it doesn’t, it will be fine for up to three days.
How many people does this serve?
This recipe serves four people – or four portions, if you happen to want it every day just to yourself!
The recipe method shows it divided up into separate containers so each portion can be stored and heated up separately for added convenience.
What kind of noodles should I use?
Make sure they are ‘straight to wok’ cooked-style noodles. The dried ones won’t be ready in time, or will need pre-cooking beforehand!

Homemade Instant Noodles {10 Minute Meal}
Ingredients
- 1/2 Red cabbage, Finely shredded
- 200 g Mushrooms, Finely sliced
- 4 Spring onions, Finely sliced
- 600 g Read-to-wok noodles, 2 x 300g packs
- 130 g Cooked pork slices, (Optional)
For the sauce:
- 4 tbsp Soy sauce, (1 tbsp per person)
- 4 tbsp Peanut butter, (1 tbsp per person)
- 4 tbsp Sweet chilli sauce, (1 tbsp per person)
- 2 tsp Garlic paste, (1/2 tsp per person)
- 2 tsp Ginger paste, (1/2 tsp per person)
To serve:
- 4 tbsp Water, (1 tbsp per person)
Instructions
- Put all of the vegetable meat ingredients shared equally between 4 containers.
- Put the 'sauce' ingredients into each one as directed in the ingredients.
- Put on the lids and store in the fridge.
- When you are ready to serve, add the water and microwave (with the lid loosely on) each one for 1:30 minutes (or according to the noodle instructions).
- If you are cooking more than one at a time you may need to adjust the cooking time.
- Give them a good stir (or shake in their tub with the lid on!). Be sure to check that they are hot through and serve immediately.

I love instant noodles and these are so much better! I changed the pork to chicken and didn’t put the peanut butter as I don’t like it. Mine took a little longer in the microwave and felt like giving up half way through chopping but I’m so glad I carried on. Full of flavour, goodness and 4 lunches for the week sorted! 😊
Oh my goodness was this delicious. I added in mangetout and baby sweetcorn just to add to the veg content and it was soooo scrummy. It felt so naughty but I must have had 4 of my 5 a day! Thank you!
