I love a midweek stir fry because they’re quick, healthy and tasty, but this Peanut Butter Noodles with Halloumi recipe takes it to a whole new level! It’s a delicious vegetarian family meal.
This Peanut Butter Noodles recipe replicates a satay-style stir fry with a slight nod to the flavours and style of Thailand or Indonesia, with easy to get hold of ingredients.
If you’re looking for a quick vegetarian satay noodles recipe, this one is nice and speedy, ready in about 15 minutes, with loads of flavour and texture and from the salty halloumi.
You can adapt it to suit your tastes, adding whichever veggies you have in, or you can add meat too if you fancy some satay chicken.

How we came up with this recipe
I love a noodle dish, and I wanted to make a vegetarian recipe that involved halloumi.
If you haven’t added halloumi to any of your meals yet, please give this one a try – you will immediately realise what you’re missing!
It’s the perfect cheese to cook with as a chicken or beef alternative as it’s so meaty and salty – and yes, a little bit squeaky too!
Peanut butter is such a great ingredient too – it’s delicious in both sweet and savoury dishes.
When testing this recipe, I wanted to see if it would work as a dupe for a peanut sauce (along with a few simple extras), and it worked!
It’s a real bargain ingredient to have in the cupboard too. When I initially published this recipe for a Midweek Meal Plan, it cost 89p from Aldi!
Peanut Butter Noodles Ingredients Notes
- Halloumi – This recipe has x2 packs of halloumi, but you can just use 1 if you prefer
- Noodles – I like to use egg noodles for their taste and consistency, but you can choose a different style if you like. Always cook to the pack instructions
- Peanut butter – I use smooth but you can use crunchy if you like a bit of texture
- For the rest of the satay-style sauce – Soy sauce, soy sauce, sweet chilli sauce, garlic puree, honey and a little boiling water
How to make Peanut Butter Noodles
- Heat the oil and pan fry the onions and peppers, then set aside. Heat the rest of the oil and pan-fry the halloumi until crisp.
- Meanwhile, cook the noodles.
- Mix the sauce ingredients and whisk until smooth.
- Combine everything together and stir really well. Sprinkle with spring onions and peanuts to serve.
Substitutions
- Nut-free alternative – I haven’t tried and tested these, but you could try tahini, sweet chilli sauce or teriyaki instead of the peanut butter
- Vegetables – You can also mix up the vegetables to your taste – or whichever ones the kids will eat!
- Meat – Chicken satay sauce is so delicious, and this would be very similar. Just make sure you cook the meat through before adding
Leftovers
In the fridge You can keep this recipe in the fridge for 3 days. Reheat fully before serving. You may need to add a splash of water before reheating.
In the freezer Cooked noodles don’t generally freeze very well, but I would rather freeze than throw it away. Make sure you defrost thoroughly before reheating.

FAQs
No, halloumi is made from sheep’s milk, but you can buy vegan halloumi cheese as an alternative.
It’s obviously not totally authentic satay, but peanut butter is a great ingredient because it melts into a sauce when heated up, is tasty and healthy too. There are so many ways you can use peanut butter.

Peanut Butter Noodles with Halloumi {Satay-Style Stir Fry}
Ingredients
- 2 tsp Olive oil
- 1 Large onion, Sliced
- 4 Peppers, Sliced
- 450 g Halloumi, See notes
- 250 g Egg noodles
- 2 Spring onions
- 50 g Salted peanuts, To garnish
For the sauce:
- 125 g Peanut butter
- 6 tbsp Soy sauce
- 3 tbsp Sweet chilli sauce
- 1 tsp Garlic puree
- 2 tbsp Honey
- Enough boiling water to make a smooth sauce
Instructions
- Heat half of the oil in a pan and pan fry the onions and peppers.
- Set aside. Heat the rest of the oil and pan-fry the halloumi until crisp.
- While it’s frying, cook the noodles according to the pack instructions.
- Mix the sauce ingredients and whisk until smooth.
- Combine everything together and stir really well.
- Sprinkle with spring onions and peanuts to serve.

I really enjoyed the flavours of this dish. However I made the sauce too thick, maybe give more guidance on how much boiling water to add to the sauce mix?
Hi Chloe, it’s impossible to give an exact measurement I’m afraid as we tested with 4 different brands of peanut butter (!!) and they all had a totally different consistency! It’s best to just thin it until you get the consistency that suits you with the brand you are using 🙂
