Eight years ago this week, I met my hunk (are you reading this dear?) of a husband. Firstly, how the heck can we possibly be that old? Secondly, how did we get past that first date?
We met in a bar at 6pm on a Thursday. I thought I was on to a winner as if he was a total loser I’d be able to get away and home in time for Hollyoaks (who was the loser?) But he kind of wasn’t. Oh apart from he didn’t suggest we have dinner, just got me hideously drunk. He answered his phone during the date, so rude. He almost fell asleep in the super hip bar we ended up in and then made an utterly inappropriate pass at me (now a legendary dinner party tale among our friends).
Somehow though, he literally made me weak at the knees. He’s the only thing that’s ever made me so excited I couldn’t eat. That was when I knew it was serious.
As you’ll know if you’re a regular here, I worship at the alter of food. He, on the other hand, loves rugby, ale, watching old cowboy films and has no interest in what goes on in the kitchen. Apart from two things; there must always be excellent coffee and plenty of ice cream in the house. So Barnsey, this one’s for you..
Our Nespresso machine was a wedding gift 6 years ago and still going strong. As you might know if you have one, for the first time lots of other companies are now producing pods for the machines, rather than just Nespresso themselves.
In this recipe I’ve used my favourite new pod, Cafépod Espresso Intense. Rich, dark and smooth, this is the best home coffee I’ve had in a long time. The price works out about the same as Nespresso brand pods, but being able to buy them from some supermarkets (rather than mail order) is super convenient.
If you haven’t tried instant, frozen fruit ice cream, where have you been? Not spending hours trawling Pinterest? Oh right, just me then.. Well, it’s all over the internet and rightly so, it’s life changing. Low calorie, packed with healthy stuff and super quick. Oh, leave out the Nutella and it’s vegan too.
It works best in a food processor, but you can try with a hand blender. Word of warning, I did once blow up a hand blender making this. Totally worth it though..
Instant Skinny Hazelnut Latte Ice Cream
Ingredients
- 3 Bananas, peeled, sliced and well frozen
- 1 Tablespoon of Nutella
- 1 Shot of Espresso, about 40ml, chilled (or you can use instant coffee made up)
- A handful of roasted hazelnuts to serve
Instructions
- Pop your frozen bananas, nutella and cold espresso into a food processor and blitz until very smooth. It will be the consistency of Mr Whippy ice cream.
- Eat as it is or pop into the freezer for 30 minutes - 1 hour to firm up a little.

Oh that looks SO good, with my new found love of iced cofee I must try something similar.
My first date with my husband came around 12 months after I’d first met him and we’d had numerous evenings out with a bigger group of friends first. I recall on the first time we were left to our own devices that we went to a Wetherspoons pub in Wardour Street, Soho. Which in the mid nineties was about as glamorous as recent graduates got!
Oh Sarah that made me laugh, was it the Wetherspoons 2 for £5 meal they used to do?!
Those were the days. It has risen to 2 meals for £6.49 now. Bloody inflation 😉

Loving this recipe… instant blender ice cream is just pure genius. It changed my world when I discovered you could make ice cream in a matter of minutes. And as it’s fruit based I think it’s perfect breakfast food!!! I’m always freezing chunks of banana that’s just on the turn so I can whizz it up later. I’m going to give your recipe a try as i’m such a coffee and nutella fiend!!!!
