Using a weekly Meal Plan takes the drama out of midweek dinners. Stay balanced, save money and save your sanity!

This is the fourteenth weekly meal plan I will be sharing on Instagram, Facebook and TikTok, and so many of you asked for all of the info in one place, so here it is. Watch out for the videos of each recipe coming each night this week, so you can cook along.

For reference, I shopped for this Meal Plan in September 2022 at Tesco and it cost £35.14.

Why use a meal plan?

⭐️ Knowing exactly what food to buy for avoids food waste, saving you money.

⭐️ Having a plan for dinner each night avoids the mental load of “what’s for dinner?” questions every night.

Some tips:

➡️ Check for any items on the shopping list that you already have in your cupboard.

➡️ Maybe think about doubling up and freezing a recipe or two where the recipes are suitable, so save cooking another day or for the weekend.

➡️ Remove ingredients for any meals that you don’t want to cook.

➡️ The shopping list includes the cheapest version of each ingredient. Obviously if you want to buy lower fat mince or free range etc that’s personal choice.


The recipes:

Dinner 1

⭐️ I used a pack of small wraps here but you could use large ones if you prefer.

⭐️ This is a complete meal with vegetables, carbs and protein, but you could serve with extra tortilla chips or potato wedges if you fancy.

Mexican Lasagne

Say hello to Mexican Lasagne. Tasty chilli with added beans and veggies, layered up with tortillas and cheese and baked until crunchy on top. Is it actually a lasagne? Maybe not. Is it a delicious quick and easy dinner? Definitely!

Dinner 2

⭐️ You can use shop bought breadcrumbs here or make your own by blitzing up (or freezing and then grating!) some stale bread.

⭐️ We used Gran Padano cheese instead of Parmesan as it’s cheaper.

⭐️ We served this with the same coleslaw that you’ll make to go with the prawn tacos. Use half the cabbage and one red onion, plus make up HALF of the dressing from the prawn tacos recipe.

⭐️ For the Chips:
1kg Potatoes
2tbsp Oil
2tsp Salt
2tsp Garlic Granules

  1. Preheat the oven to 200c, and cut your potatoes into chips (I don’t bother peeling as am lazy 🤫)
  2. Coat in the oil, salt and garlic granules and spread on a single layer on a baking sheet.
  3. Bake for 45-60 minutes (depending on your chip size!) turning once.

Homemade Chicken Nuggets

Succulent bite-sized chicken pieces with a cheesy, golden, crispy coating. So much flavour without the faff, these fast food-style homemade Chicken Nuggets are a winner for a family meal or as part of a buffet-style party platter.

Dinner 3

⭐️ This is a complete meal with vegetables, carbs and protein but you could serve with some extra vegetables if you’d like to.

Dinner 5
