Chicken Tacos {10 Minute Recipe}

This is probably the speediest recipe for Chicken Tacos around. Rustle it up on busy evenings in less than 10 minutes!

Ingredients

  • 500 g Cooked chicken Approx. 2 x 240g packs
  • 100 g Barbecue sauce
  • 8 Small tortilla wraps
  • 340 g Can of sweetcorn Drained
  • 1/2 Shredded lettuce I used Iceberg
  • 1 Small red onion Finely chopped
  • 2 Limes to squeeze over

To serve (optional):

  • Grated cheese
  • Sour cream or yoghurt
  • Salsa
  • Avocado

Instructions

  • Mix the cooked chicken with the barbecue sauce in a bowl. Serve cold or heat according to the pack instructions.
  • Toast the wraps carefully over an open gas flame or put in oven according to pack instructions.
  • Serve with the sweetcorn, lettuce, red onion and limes squeezed over.

Notes

Chicken: You can cook the chicken yourself rather than using precooked from a packet, or you could use this recipe with Roast Chicken leftovers
Heating the tortillas: I like to toast the wraps (CAREFULLY) over an open gas flame to give them some texture, but you can also warm them in the oven according to the packet instructions
Serving suggestion: I love to serve this recipe with grated cheese, sour cream or yoghurt, salsa and avocado. You could always bulk the meal out with some homemade wedges, couscous or a Mexican salad too if you like
