Easy Greek Salad

This classic homemade Greek Salad recipe is easy, delicious and fresh - a perfect summer side dish that has all the flavour of the Med and transports you with every mouthful.

Ingredients

For the Greek Salad:

  • 400 g Tomatoes Chopped into bitesize pieces
  • 1 Red onion Chopped into thin pieces
  • 1 Green pepper Chopped into bitesize pieces
  • Half Cucumber Chopped into bitesize pieces
  • 100 g Black olives Drained
  • 200 g Feta cheese

For the dressing:

  • 1 Clove Garlic Peeled and crushed
  • 1 tsp Dried oregano
  • 20 g Fresh mint Finely chopped
  • 3 tbsp Red wine vinegar
  • 1 tbsp Lemon juice
  • 4 tbsp Extra virgin olive oil
  • Salt and freshly ground black pepper

Instructions

  • Put all of the salad ingredients together in a shallow bowl.
  • Combine the dressing ingredients together and whisk well. 
  • When ready to serve, pour the dressing over the salad and stir well.

Notes

Peppers: The type of peppers used here are bell peppers 
When to add dressing: Dress the salad just before serving to avoid the tomatoes and cucumber going soft
To chop your salad: A great quality, sharp knife will honestly change your cooking life. This is one of my favourites that I use every single day. The difference when cutting ripe tomatoes is unbelievable
Chopping gadget: When it comes to a chopper, this one is my favourite and is a salad gamechanger
Dressing: You can adjust the ratio of vinegar to olive oil to suit your own taste
