Crunchy Cabbage Salad {with Peanut Dressing}

This flavour-packed Cabbage Salad with peanut butter dressing is a perfect side dish for barbecues, grilled meat or fish. It’s fresh, zesty and fruity deliciousness!

Ingredients

  • 2 Red peppers
  • Half White cabbage
  • Bunch Spring onions
  • Half Cucumber
  • 2 Ripe mangos

For the peanut butter salad dressing:

  • 125 g Peanut butter See notes
  • 4 tbsp Soy sauce
  • 3 tbsp Sweet chilli sauce
  • 1 tbsp Honey
  • 2 Limes Zest and juice
  • Splash of water
  • Handful of fresh mint
  • Handful of salted peanuts

Instructions

  • Chop everything up into small chunks and add to a bowl.
  • Mix the salad dressing in a separate bowl or jug. Add just enough water to make a smooth, runny sauce.
  • When ready to serve, add the dressing to the salad bowl and mix everything together.
  • Top with peanuts and mint.

Notes

Peanut butter: Natural peanut butter is a lot more runny than regular so you’ll need less water than in the recipe if using this.
Pepper: The type of pepper used here are bell peppers. 
Dressing the salad: Do this just before serving to avoid the cucumber going soft
Knife: A great quality, sharp knife will honestly change your cooking life. This is one of my favourites that I use
Chopper: If you prefer to use a gadget to speed things up, you can use a chopper instead. This one is my favourite and is a salad gamechanger!
