These Easy Oven Chicken Fajitas are a simple, quick family dinner. Chicken breast pieces coated in fajita seasoning, with peppers and onions, oven-baked to perfection. Serve with tortillas, sour cream or yoghurt, grated cheese and avocado for a complete meal.
1Red pepper (capsicum)Deseeded and cut into wedges.
1Yellow pepper (capsicum)Deseeded and cut into wedges.
1Green pepper (capsicum)Deseeded and cut into wedges.
2Large onionsPeeled and cut into wedges.
For the fajita seasoning (or use 4 tbsp of ready-made fajita seasoning):
1tbspChilli powder
1tspGround cumin
1tspCumin seeds
2tspPaprika
1/4tspCayenne pepper
1/2tspGarlic powder
1tspSea salt
1tspGround black pepper
To serve:
Tortilla wraps
Sour cream or yoghurt
Avocado slices
Grated cheese
Instructions
Pre-heat the oven to 200C.
Put the oil, chicken chunks, peppers and onions onto a large baking tray. Mix the fajita seasoning ingredients in a small bowl and sprinkle over. Mix thoroughly with clean hands.
Bake for 20-25 minutes until the chicken is cooked through and the peppers are starting to blacken at the edges.
Serve with the accompaniments and let everyone dig in and build their own fajitas.

How much chicken to use: About 4 skinless and boneless chicken breasts, chopped into chunks.
