Easy Chicken Fajitas {Oven Baked}

These Easy Baked Chicken Fajitas are a simple, quick family dinner. Chicken breast pieces, coated in fajita seasoning, with peppers and onions oven cooked to perfection. Serve with tortillas, sour cream or yoghurt, grated cheese and avocado for a complete meal.

  • 2 tsp Olive oil
  • 650 g Chicken breasts See notes
  • 1 Red pepper (capsicum) Deseeded and cut into wedges
  • 1 Yellow pepper (capsicum) Deseeded and cut into wedges
  • 1 Green pepper (capsicum) Deseeded and cut into wedges
  • 2 Large onions Peeled and cut into wedges

For the fajita seasoning (or use 4 tbsp of ready made fajita seasoning)

  • 1 tbsp Chilli powder
  • 1 tsp Ground cumin
  • 1 tsp Cumin seeds
  • 2 tsp Paprika
  • 1/4 tsp Cayenne pepper
  • 1/2 tsp Garlic powder
  • 1 tsp Sea salt
  • 1 tsp Ground black pepper

To serve

  • Tortilla wraps
  • Sour cream or yoghurt
  • Avocado slices
  • Grated cheese


  • Pre-heat the oven to 200C.
  • Put the oil, chicken chunks, peppers and onions onto a large baking tray. Mix together the fajita seasoning ingredients in a small bowl and sprinkle over. Mix thoroughly with clean hands.
  • Bake for 20 - 25 minutes until the chicken is cooked through and the peppers are starting to blacken at the edges.
  • Serve with the accompaniments and let everyone dig in and build their own fajitas.


How much chicken to use:
About 4 skinless and boneless chicken breasts, chopped into chunks
