Burrito Bowls {No Cook Recipe}
This is a simple no-cook Burrito Bowls recipe that is SO delicious but requires very little effort or time. Prep-ahead if you like and add your own variations. This combination of ingredients takes just 15 minutes and it’s so good.

- 500 g Microwave rice 2x 250g pouches.
- 340 g Tinned sweetcorn Drained.
- 400 g Tinned black beans Drained and rinsed.
- 240 g Mexican chicken Precooked. See notes.
- 1 Avocado Peeled and cut into small chunks.
- 200 g Fresh salsa From the supermarket fridge.
- 2 Limes
Heat the rice according to the pack instructions.
Pile the rice into the bowls, along with the sweetcorn, black beans (you can heat these if you prefer) and chicken.
Spoon on the avocado and salsa, and squeeze half a lime over each bowl.
Rice: Use flavoured microwave rice pack if you prefer. We use 2 pouches for 4 people but obviously you can adjust if you prefer.
Chicken: We used precooked supermarket flavoured Mexican chicken here. You can use any type of precooked chicken that you prefer.
