Greek Salad Recipe

This delicious and simple traditional Greek Salad recipe is the perfect summer side dish. It never goes out of fashion when made well. The perfect reminder of holidays and hot days. So easy to make, it's low carb, gluten free, packed with tasty tomatoes, cucumber, olives, feta cheese and olive oil.

Ingredients

For the Greek Salad:

  • 400 g Tomatoes Chopped into bitesize pieces
  • 1 Red onion Chopped into thin pieces
  • 1 Green pepper Chopped into bitesize pieces
  • Half Cucumber Chopped into bitesize pieces
  • 100 g Black olives Drained
  • 200 g Feta cheese

For the dressing:

  • 1 Clove Garlic Peeled and crushed
  • 1 tsp Dried oregano
  • 20 g Fresh mint Finely chopped
  • 3 tbsp Red wine vinegar
  • 1 tbsp Lemon juice
  • 4 tbsp Extra virgin olive oil
  • Salt and freshly ground black pepper

Instructions

  • Put all of the salad ingredients together in a shallow bowl.
  • Combine the dressing ingredients together and whisk well. 
  • When ready to serve, pour the dressing over the salad and stir well.
