Instant Pot Pulled Pork

Ingredients

For the rub:

  • 2 tbsp Demerara sugar
  • 1 tbsp Caster sugar
  • 2 tbsp Smoked paprika
  • 2 tsp Cayenne pepper
  • 2 tbsp Onion powder
  • 1 tbsp Garlic powder
  • 1 tsp Black pepper Freshly ground
  • 2 tsp Ground ginger
  • 1 tsp Salt
  • 1 tbsp Dried oregano

Also:

  • 1 tbsp Olive oil
  • 2 kg Pork shoulder Cut into 5 or 6 chunks
  • 3 tbsp White wine vinegar
  • 3 tbsp Honey
  • 3 tbsp Tomato puree
  • 500 ml Water

Instructions

  • Stir all of the rub ingredients together and rub all over your pieces of pork shoulder. If you have time, leave to absorb for 30 minutes - 2 hours.
  • Set the Instant Pot to 'saute' mode and heat the olive oil in it. Fry off the pork pieces in batches until golden brown all over.
  • When all of the pork is browned and set to one side, keep the Instant Pot on 'saute' mode and use some of the water to scrape the meat bits off of the bottom of the pan as the water bubbles.
  • Pop the meat back in, leaving the meaty water at the bottom, add the vinegar, honey, tomato puree and the rest of the water. Seal the lid of the Instant Pot and set the timer for 60 minutes.
  • When the Instant Pot is finished, allow it to release the pressure naturally (will take about 15 - 25 minutes). Remove the pork to a bowl and switch on 'saute' mode again. Allow the sauce to reduce by half (you can do this in a saucepan in the hob if you need it to be a little quicker).
  • Meanwhile shred or pull apart the pork into chunks. Add it back to the reduced sauce and stir well. Check for seasoning and add more salt, pepper or honey if needed.
