Courgette Lasagne

This super healthy and delicious vegetarian meal, is perfect for family suppers and is the perfect lasagne alternative.

Ingredients

  • Cooking spray
  • 1 tbsp Olive Oil
  • 1 large Onion
  • 1 Garlic clove
  • 250 g Button mushrooms thinly sliced
  • 250 g Chestnut mushrooms thinly sliced
  • 400 g Chopped tomatoes
  • 2 large Courgettes grated
  • 500 g Ricotta cheese
  • 1 Egg whisked
  • 150 g Lasagne sheets
  • 50 g Reduced fat Mozzarella
  • Salad leaves and cherry tomatoes to serve

Instructions

  1. Pre heat oven to 180C (fan) 160c (conventional).

  2. Lightly spray an ovenproof dish with cooking spray.

  3. Heat the oil in a large pan and cook the onion and garlic, stirring until softened.
  4. Remove half of the onion mixture and set aside. Add the mushrooms and cook for 5 minutes before adding the tomatoes. Bring to the boil and season with salt and pepper.
  5. Meanwhile, squeeze the excess water from the grated courgette and mix with the reserved onion mixture and the ricotta. Add the egg and season with salt and pepper.
  6. Spoon some of the mushroom mixture over the base of the dish. Top with a third of the lasagne sheets. Spread with some of the ricotta mixture and repeat until you've used everything.
  7. Sprinkle with the mozzarella and bake for 30 minutes or until golden brown and cooked through.

  8. Serve with salad and cherry tomatoes.
  9. Enjoy!
