Very British Jubilee Easy Lemon Tart

Who doesn't love a summery Lemon Cheesecake Tart for dessert? This one is the ultimate cheat's recipe. So good!

Ingredients

  • 300 g Ginger nut biscuits
  • 100 g Butter Melted
  • 300 ml Double cream
  • 165 g Cream cheese
  • 150 g Lemon curd
  • 175 g Raspberries See notes
  • 280 g Blueberries

Instructions

  • Crush the ginger nuts until they are sandy and add the melted butter. Mix well.
  • Press into the flan case until the bottom and the sides are firmly packed down. Using the bottom of a glass is helpful.
  • If you have time, chill for 30 minutes.
  • Beat the double cream, cream cheese and lemon curd until it is very stiff and thick. Add to the tart base and smooth out.
  • Add your berries in your Union Jack pattern and chill for at least 4 hours. Keep it in the fridge until you are ready to eat it!

You may need to add more or fewer berries depending on their size!
