Watermelon, Feta & Florette Salad

A lovely light summery salad with the refreshing watermelon.

Ingredients

  • 80 g bag of Florette Baby Leaf and Rocket Salad
  • Half a small Watermelon
  • 100 g Feta cheese
  • Half a small Cucumber
  • 75 g Croutons
  • Small handful of fresh mint
  • 4 tablespoons of Extra Virgin Olive Oil
  • 1 tablespoon of White Wine Vinegar
  • Good pinch of sea salt

Instructions

  • Split the bag of salad between two plates.
  • Peel and chop the watermelon into large chunks and place on top.
  • Chop the feta and cucumber into chunks and put on top.
  • Sprinkle with croutons.
  • Finely chop the mint.
  • In a small jug or jam jar, mix the chopped mint, oil, vinegar and sea salt very well.
  • Dress the watermelon feta salad at the very last minute.
