Watermelon, Feta & Florette Salad
A lovely light summery salad with the refreshing watermelon.

- 80 g bag of Florette Baby Leaf and Rocket Salad
- Half a small Watermelon
- 100 g Feta cheese
- Half a small Cucumber
- 75 g Croutons
- Small handful of fresh mint
- 4 tablespoons of Extra Virgin Olive Oil
- 1 tablespoon of White Wine Vinegar
- Good pinch of sea salt
Split the bag of salad between two plates.
Peel and chop the watermelon into large chunks and place on top.
Chop the feta and cucumber into chunks and put on top.
Sprinkle with croutons.
Finely chop the mint.
In a small jug or jam jar, mix the chopped mint, oil, vinegar and sea salt very well.
Dress the watermelon feta salad at the very last minute.
