Ingredients

  • 150 g Unsalted butter At room temperature
  • 75 g Caster sugar
  • 75 g Soft light brown sugar
  • 1 Egg
  • 225 g Plain flour
  • 1/2 tsp Bicarbonate of soda
  • 125 g Mixed chocolates and candy See notes

Instructions

  • Preheat the oven to 180C.
  • Mix all of the ingredients, apart from the chocolate fillings, and beat together. (Use a mixer if you have one).
  • Mix in the chocolate toppings of your choice gently with a spoon.
  • Shape into 12 small, round balls on a non-stick baking sheet. Make sure you leave plenty of space between them. Use two baking sheets if you have another one, or bake in two batches, 6 per sheet.
  • Add extra toppings if you like.
  • If you have time, freeze the balls on a baking sheet for about 30 minutes before baking. (WE RECOMMEND THIS! It stops them spreading and losing their shape).
  • Bake for 13-15 minutes, or until just golden at the edges.
  • Allow to cool before you move the cookies from the tray.

Notes

Cookie fillings:
M&Ms, Smarties and chocolate chunks all work well.
Freezing time:
To stop the cookies from spreading and to keep a neat, round shape, it would be best to freeze them for about 30 minutes on a baking sheet before you bake them.
