Easter Rocky Road {Easiest Ever Recipe!}

This is the ultimate indulgent no-bake baking at Easter! A chocolatey Easter Rocky Road with extra chocolate on top. Perfect for making with the kids or as a gift.

Ingredients

  • 150 g Unsalted butter
  • 400 g Milk chocolate Chopped
  • 4 tbsp Golden syrup
  • 180 g Mixed mini chocolate eggs
  • 80 g Mini Eggs
  • 150 g Oreos Broken
  • 180 g Mini marshmallows

To decorate:

Instructions

  • Melt the milk chocolate, butter and golden syrup in a bowl in the microwave, stirring every 30 seconds. (Or melt over a pan of hot water.)
  • Once smooth, stir in the broken up Oreos, marshmallows and chocolate eggs.
  • Mix together well and smooth into a lined baking tin.
  • Pour over more melted chocolate and embed in more chopped up eggs to decorate. Set in the fridge overnight until set.

Notes

Chocolate: I use my favourite Callebaut chocolate for this recipe. This chocolate is just amazing. It melts so well and really makes a difference to any recipe
Tin: I usually use a tin like this for my rocky roads or tray bakes. It measures 20cm x 20cm and gets the best thickness. You can use another size or shape but just be aware your squares might be thinner or thicker
Line the tin: Make sure you do this so you can get the rocky road out quicker and without breaking it. I use baking parchment or baking paper for almost everything I bake. No sticking, ever
Melting the chocolate: I find the easiest and quickest way is to use the microwave, but do this carefully as it can burn (no longer than 30 second bursts, stirring in between)
You can also bubble up some water in a pan and place a heatproof bowl over it with the chocolate inside (make sure the water isn’t touching the bottom). This takes a little longer but the chocolate melts nice and evenly
Gift bags: Once I have cut up my slab of rocky road, I pack the pieces, fresh from the fridge, into little bags like these cellophane bags. It adds a special something to make them feel like a real gift
