Course: Main Course
Cuisine: Mediterranean
Servings: 4
For the sauce:
- 650 g Cherry tomatoes
- 200 g Feta cheese See notes
- 1 tsp Dried oregano
- 2 Cloves Garlic Peeled and chopped
- 2 tbsp Balsamic vinegar
- Salt and pepper
For the pasta:
- 300 g Pasta See notes
- 10g Basil
Put the cherry tomatoes, feta, oregano, garlic, balsamic and salt and pepper into the slow cooker. Cook on HIGH for 2 hours or LOW for 3 hours.
At the end of the cooking time, the tomatoes should be soft and bursting. Blend the sauce with a hand blender or mash with a fork if you don't have one.
Boil the pasta in salted water according to instructions and drain.
Add the basil and pasta to the sauce and stir well.
Feta cheese: If you don't like feta you could try a different cheese of your choice. I have used Boursin Garlic and Herb Cream Cheese before and it was amazing!
Pasta: I’d recommend something like rigatoni, penne, fusilli or gemelli, but go with what you prefer
Blending the sauce: I recommend blending as I think it really improves the texture of the sauce. Scoop out a few spoons of tomatoes, blend the rest and then put them back with the pasta so you get a few chunks of tomato bursts. I use a hand blender for this job but if you don’t have one, mash it all up with a fork instead
Cooking the pasta: I tried cooking the pasta in the sauce to begin with and it wasn’t good! So I’d recommend cooking your pasta as normal in a pan and adding it to the sauce when it’s cooked. I think it’s worth the 10 minutes of having a saucepan on for a better result
