- 250 g Spaghetti
- 1 tsp Oil
- 2 Courgettes Chopped
- 3 tsp Garlic
- 360 g Frozen king prawns
- 150 g Frozen peas
- 350 g Garlic and herb soft cheese
- 1 Lemon Juice and zest
- Sea salt and freshly ground black pepper
Put your pasta on to boil according to the pack instructions.
Heat the oil in a pan and add the courgettes and garlic, fry for 2-3 minutes until starting to soften.
Add in the prawns and fry until cooked through.
Add the peas to the boiling pasta 3 minutes before the end of the cooking time. (RESERVE SOME OF THE COOKING WATER!)
Add the drained pasta and peas to the courgettes and prawns. Add the cream cheese and the zest and juice of the lemon.
Mix everything really well. If you want the sauce to be more liquid, add some of the reserved cooking water and serve immediately.
King prawns: I cook the prawns from frozen but you can use any type (just adjust cooking times accordingly)
Soft cheese: Make sure you use the garlic and herb variety. This is our secret weapon! It's a perfect flavour-packed shortcut
To make this a vegetarian dish: Replace the prawns with your favourite vegetarian protein alternative
Type of pasta: You can make this as a prawn linguine if you prefer, or whatever pasta you have in or like
