We all love a drizzle cake, what could be better than an Orange Drizzle Cake.. with a taste of summer!

How do you make an Orange Drizzle Cake?

This easy Orange Drizzle cake recipe is based on a lemon drizzle cake recipe. It’s a simple sponge cake, with orange zest and some added Pimms (yesss!). It’s baked in a loaf tin, for a nice, simple, one pan cake.

Whilst it’s still hot, you simply add a sugar syrup mixture, an easy way of icing really. It sinks in to make a gorgeous moist Orange Drizzle Cake.

Tips for making the Orange Drizzle Cake:

  • Be careful not to over bake your Orange Drizzle Cake. Take it out of the oven when the skewer only just comes out clean. (As you’re going to let it cool in the tin, it will continue to cook a little longer.)
  • Serve this sponge cake as fresh as possible. No more than two days after baking for it to taste as good as possible.
  • Use the zest of your oranges in the cake batter and save them to use the juice in the drizzle icing.

What I used to make the Orange Drizzle Cake with Pimms:

  • Microplane Zester – My secret weapon for any recipes with citrus zest in is my Microplane Zester. I know I’m a wimp but I used to hate making lemon drizzle cake before splashing out on one of these. They have SO many glowing reviews. You can buy them here on Amazon: Microplane Premium Zester.
  • Skewers – These are SO useful for so many little jobs in the kitchen! Testing cakes are cooked, pricking things (like this cake), testing vegetables. Once you’ve bought a set, you’ll wonder how you lived without them. I like these Metal Skewers Set on Amazon.
  • Good Quality Loaf Tin – A sturdy tin that conducts the heat evenly will really make a different to your bakes. This Non Stick Loaf tin on Amazon is a good buy.

Orange Drizzle Cake with Pimms

This deliciously moist Orange Drizzle Cake is so easy to make. Loaded with a Pimms drizzle and piles of fruit, it's a must make summer bake. 
Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour
Servings: 10 People

Ingredients 

  • 225 g Unsalted butter, At room temperature
  • 225 g Caster sugar
  • 4 Free range eggs
  • 225 g Self raising flour
  • 1 Orange, Zest only
  • 75 Pimms

For the drizzle:

  • 100 g Caster sugar
  • 75 ml Pimms
  • 1 Orange, Juice only

To decorate:

  • A handful of strawberries, cucumber, mint and orange segments

Instructions 

  • Preheat the oven to 180C.
  • Beat the butter and sugar together until light and fluffy.
  • Beat in the eggs one by one until combined. Wipe down the sides of the bowl between each addition.
  • Add the flour, orange zest and Pimms, and stir in until totally combined.
  • Pour the batter into a loaf tin, lined with baking paper.
  • Bake for 35 - 45 until a skewer comes out clean.
  • Whilst the cake is still hot and in the tin, prick it all over with a skewer (or thin knife). 
  • Mix the sugar, Pimms and orange juice in a small bowl and drizzle over the cake. It may take a while to sink into the cake, so you may need to add it slowly.
  • Allow to cool in the tin, then turn out, and top with the fruit just before serving.

    Why can’t I get your lemon drizzle cake recipe anymore. I baked this last week and everyone loved it so was disappointed when I couldn’t get the recipe again.
