Hello, my new favourite soup recipe!

My children are very anti-courgette. Honestly, it’s almost some kind of religion for them. 

They will spot it hidden away in a dinner at 100 paces and the accusations start to fly around about that time I told them it was just cooked cucumber. (“IT IS NOT MUMMY. WE KNOW THE TRUTH.”)

Anyway, still I persist as I bloomin’ love courgettes. Enter, this brilliant tasty, cheesy Courgette Soup.

I called it Superhero Green soup, didn’t mention courgettes and.. it was a win! I hope you and your family love it too.

How I came up with this recipe

Cooking up a batch of homemade soup in the colder months is one of my favourite things to do, so we need plenty of flavour varieties to keep us going through our LONG winters.

I wanted to create a courgette soup recipe that:

✅ Is packed with green veggies for at least 2 of your 5 a day in each bowl

✅ Freezes really well for a perfect quick and healthy lunch

✅ Is gluten free, easily made dairy free and vegetarian

Courgette Soup Ingredients Notes

  • Onion and garlic – You can chop a fresh one or use pre-chopped frozen 
  • Vegetables – Courgettes, leeks and peas (you can use frozen peas or petit pois)
  • Vegetable stock – If you like a thinner soup, add slightly more, or less for a thicker heartier version. I like Marigold Boullion Powder
  • To serve – Chives, crème fraîche and croutons

How to make Courgette Soup

1. Chop your veggies and heat your oil in a heavy-bottomed pan.

2. Fry the onions and garlic first, then the courgettes and leeks.

3. Add in the stock and bring to the boil. After about 20 minutes, stir in the parmesan and blend.

4. When your soup is smooth, serve with your chosen toppings.


Substitutions

  • Cheese – If you don’t have Parmesan or don’t like it, you can substitute in a strong mature cheddar cheese
  • Vegan – Simply omit the cheese in this recipe or swap for a dairy-free version, and it will be suitable for vegans. Check your stock packet to make sure

Leftovers

In the fridge Courgette Soup can be cooked and kept in an airtight container for around 3-4 days in the fridge.

This is a perfect make-ahead or batch cook recipe. It just needs reheating on the hob until warmed through before serving.

In the freezer You can also freeze the soup in an airtight container for 2-3 months. You should defrost it overnight in the fridge and reheat thoroughly.

Top tips

Peas

Don’t overcook or the peas will lose their colour and the soup won’t be quite such a lovely green colour.

Stock

Use any good quality, fairly low salt vegetable stock. I think Marigold brand is the best around.

How to make this a little EXTRA

⭐️ Add 25g of fresh mint at the end of cooking to make Courgette, Pea and Mint Soup.

⭐️ Add a chopped red chilli with the stock to make Spicy Courgette Soup.

What to serve with this 

You can simply enjoy this with some chunky bread on the side, but if you’d like to make it as part of a bigger meal, you could make cheese on toast, a jacket potato, or a nice sandwich like a Tuna Melt.

FAQs

Can you recommend a blender for this recipe?

A hand blender is a really good staple to have and they start from about £15. A simple blender from Amazon is a good starting buy if you fancy making soups.

Do you have any other easy courgette recipes?

Are courgettes and zucchinis the same thing?

If I’m reaching you in America, we’re talking about Zucchini Soup here (yes – courgette and zucchinis are the same thing). 

They might grow on different continents but they’re still the same vegetable (actually, technically a fruit), not only delicious but high in antioxidants, vitamin C, potassium and fibre.

Easy Courgette Soup {with Parmesan}

This simple and tasty Courgette Soup recipe makes an easy lunch or simple dinner in less than half an hour. It's gluten free, easily made dairy free and vegetarian – perfect for the whole family.
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 4 Servings

Ingredients 

  • 1 tbsp Olive oil
  • 1 Onion, Chopped. See notes
  • 3 Garlic cloves, Crushed
  • 1 kg Courgette , Chopped
  • 1 Leek, Chopped
  • 1.8 ltrs Vegetable stock, See notes
  • 125 g Frozen peas/petit pois, Optional
  • 75 g Parmesan, See notes

To serve:

  • Chives
  • Crème fraîche
  • Croutons

Instructions 

  • Firstly heat olive oil in a heavy bottomed pan.
  • Fry onions and garlic, until softened.
  • Add courgettes and leeks, and cook for a further 5 minutes.
  • Add in your stock and bring to the boil. 
  • Boil for around 15-20 minutes. Until the courgettes are soft.
  • Stir in parmesan.
  • Blend to give a smooth consistency.
  • Optional: Serve with a dollop of crème fraîche, croutons and some chives sprinkled on top.
  • Enjoy!

  1. The peas haven’t been added! I used my own initiative and have to say this soup is one of my favourites.
