How we came up with this recipe

I love a quick burger recipe and this one manages to be both healthy and delicious.

I wanted to create a chicken burger that Nando’s lovers would enjoy – that is succulent chicken and a spicy coating.

The fact we can throw this together in 20 minutes is just a bonus!

Chicken Tikka Burgers Ingredients Notes

Two chicken tikka burgers on a board, with the top off, showing the cooked inside ingredients.
  • Chicken breasts – You could use chicken thighs instead of breast if you prefer. They will be delicious too, but will just take slightly longer to cook
  • Tikka seasoning – You can buy this ready from the supermarket. Or you can use a curry powder or a paste of your choice if you don’t have tikka seasoning, or just prefer another flavour
  • To serve – I like this in brioche buns with lettuce and a dollop of mango chutney finishes it off nicely

How to make Chicken Tikka Burgers

  1. Cut a slice through the chicken breasts so you can flatten them out. I do this by bashing them with a rolling pin between a sheet of baking paper.
  2. Sprinkle over the tikka seasoning.
  3. You can easily cook these either on the hob or in an Air Fryer. To cook on the hob simply heat the oil and pan fry your chicken breasts for about 7 minutes each side on a medium heat, alternatively pop them in the Air Fryer at 200c for 10-15 minutes (the cooking times for both methods will depend on the thickeness of the chicken).
  4. Plate up your burgers.

Substitutions

  • Make this vegetarian – I would recommend slices of halloumi rolled in flour and seasoning, or a giant portobello mushrooms instead of the chicken for a meat-free burger. Try this recipe.
  • Burger fillings and sauces – Choose your favourites instead and fill your boots!

Leftovers

In the fridge You can keep this recipe in the fridge for 3 days. The chicken would make fantastic lunches the day after.

In the freezer You can freeze any leftover cooked chicken (as long as it hasn’t already been frozen and defrosted).

Just wait until it’s totally cold and then put it into a freezer proof container and freeze for up to 3 months. Defrost thoroughly. As always, ensure it’s fully heated through before serving.

FAQ

How will I know when the burgers are cooked through?

Please note that the cooking time will depend on the size and shape of your chicken breasts (plus how well done you’d like the coating).

If in doubt, check your meat thermometer to make sure it is cooked through. (The ideal cooking temperature for chicken is 74°C, according to Thermapen – my go-to thermometer-makers. There’s also more cooking time information here).
